Actually, I am getting ready to barbecue this evening and here's how I do it:
1!. Heat coals and top with mesquite that has been soaked in water for 15 minutes (drain)
2!. Rub steaks with a mixture of: 1 T kosher salt, 1 tsp fresh ground pepper corn, 1/2 tsp garlic powder, 1/2 tsp bon appetit or beau monde seasoning!. Let sit for at least one hour at room temperature before cooking!.
3!. Baste steaks with: 3 T Melted butter mixed with 1 T lemon juice or red wine, 1 Tsp worcestershire sauce, 1 tsp chopped oregano or 1/4 tsp dried, 1 tsp chopped fresh basil, or 1/4 tsp dried!.
4!. Cook approximately 5 -7 minutes per side, depending on how thick the steaks are, for medium rare!. Do not pierce in order to keep juices in steak!. Remove from heat and cover with a tent of foil!. Cut after letting sit 10 minutes (juices will spread thru meat)Www@FoodAQ@Com

Don't over marinate, just some garlic and maybe some red wine and pepper!. Get steaks to room temp NEVER put a cold steak on a hot bbq!. Then turn once, no poking, when you see the blood on the side you are not cooking, turn them and don't poke! the more bounce in your steak, use your finger or the back of a spoon, the rarer it is, then rest the steaks on a warm plate covered in tin foil for 5 before serving!. Medium bbq heat, not the Satan's Coming SettingWww@FoodAQ@Com
CHECK this out, sear them both sides on a flat solid grill, that day , put in fridge, when your ready, let them come to room temp, finish on bar bQ, THEY will be talkin bout your awsome STEAKS!.Www@FoodAQ@Com
