The problem is two things!. First you are using cooking spray, never use cooking spray in Cast iron it just buils up a sticky goo and using non stick spray doesn not work for eggs no matter what you are cooking them in!. second is you need to preheat your man for 3 to 5 minutes over low heat then put in 1/2 to 1 tsp!. vegetable oil!. spread the oil all around the pan then pour in your eggs!. do not stir them n the pan but pull them to the center and pour the uncooked egg where you pulled the cooked egg from!. you can mix it up a little just before pouring out of the pan and onto your plate!.Www@FoodAQ@Com

Is you skillet well seasoned!? I use my grandmothers skillets
that are 80 yrs old and they never stick!. She gave them to me 25 yrs ago, and she got them when she got married!.
Try using a tablespoon or two of olive oil, its better for you than butter or spray anyway!. also, don't have your skillet up too hot, needs to be med!. low or it will stick AND burn!. Most ppl turn the skillet up on high or med!. high to cook food, especially frying, and thenm don't turn it down when it gets the right temp!. Your cast iron skillet is hot enuf for an egg when you can drop a drop or two of water in it and the water "dances"!. Or if you ar frying (like chicken) the drop of water will "pop"!.

Btw, just so you know, cooking spray isn't really good for cast iron, the aerosols f--k up the surface!. And makes things stick!.Www@FoodAQ@Com

I don't think you can not have egg stick in a cast iron no matter how well seasoned your pan is!. To even use quite a bit of butter with eggs in the cast iron, it would probably still stick because the "fat" is absorbed in the eggs!. I think you need to use a different type of skiller for your eggs!.Www@FoodAQ@Com

For me eggs stick in EVERYTHING but nonstick!. Stainless steel is the absolute worst (shudder) and cast iron isn't that much better!. (Even when I use a lot of oil or butter!.) Nothing worse than torn fried eggs!. So frustrating!

If you're concerned about nonstick being toxic, you may want to try a ceramic nonstick!. They are non toxic and fume free!. I bought one a couple of weeks ago and it's the best nonstick pan bar none I've ever had- even better than KitchenAid!. My hubby marvels at it! I think you can buy them almost everywhere now, but look for a really good one with a strong, sleek surface (that's on sale because they can be pricey!.)

Are you spraying the pan before it gets hot!? You are supposed to spray the pan then put it on the burner!. Maybe that will help!. I am not sure with cast iron!. I use the nonstick teflon coated pans to help with not sticking (in addition to the pam)!.Www@FoodAQ@Com

Use cooking oil, instead, and make sure that the pan is completely covered!. And when you make the scramble eggs, wash the pan before you start eating; don't let it sit out!. It's easier to wash the eggs off if it's still hot!.Www@FoodAQ@Com

Lower the temperature on the pan and cook the eggs slowly!.Www@FoodAQ@Com

if you don't like the butter because it's unhealthy, try smart ballance or an olive oil based spread!. or try a non-stick skilletWww@FoodAQ@Com
