Question: In a recipe what does 250ML OF 35% CREAM mean!?!?
I'm making sucre a la creme, and i don't get it, is it just 250ml of cream or what!?!?!? Please help!Www@FoodAQ@Com

If you're making Sucre a la creme, any kind of cream will be alright!.!. it's better that the minimum kind of cream you're using is the whipping cream,because it has 35% of fat in it!.!. but if you like your Sucre a la creme to be more creamy, it would be creamier if you use the double cream!.!. it would affect the taste ( creamier ) and also the texture ( the higher the fat, the smoother it will be )!.!. Cream comes in different fat contents i!.e!. % equal per cent of fat content
35% is usually considered whipping cream - the stuff you whip up to become whipping cream
18% is table cream (for coffee)
10% is "half and half" (also for coffee)
So, when they say 250 ml of 35% cream that means one cup of cream made of cream with 35% fat content (or whipping cream)

the 35% means the amount of fat in the cream!. If my memory is right 35% is Whipping cream!.

double cream is around 50% and single is 25%!.Www@FoodAQ@Com

I think it's just regular cream!. Half and half is 50% cream and heavy cream is higher than that so I think you are safe with regular cream!.Www@FoodAQ@Com
