Would black currant taste good in a muffin?!


Question: Would black currant taste good in a muffin!?
We have 2 or 3 black currant bushes growing in our garden, and every day we bring in at least 3 gallons of the berries!. I'm trying frantically to get rid of them: preserves, purees, jams, etc!. Now I'm thinking of baking with them!. I was thinking of using a blueberry muffin base, but then adding black currant instead of blueberries!. Yay or nay!?Www@FoodAQ@Com

They would be good in muffins, pies, as a topping for ice cream!.!.!.

BLACK CURRENT PIE

Pie crust for a two crust pie - I use the Pillsbury ready-made ones found near the refrigerated biscuits
3 cups black currents
1 1/2 cups sugar
3 Tablespoons flour
3 Tablespoons butter

Combine sugar and flour and toss with currents!. Place butter on top and cover with a lattice top or full crust!.
