Macaroni and Cheese
Fannie Farmer's Classic Baked


1 (8 ounce) package macaroni

4 tablespoons butter

4 tablespoons flour

1 cup milk

1 cup cream
1/2 teaspoon salt

fresh ground black pepper, to taste

2 cups good quality shredded cheddar cheese

1/2 cup buttered breadcrumbs
1!. Preheat oven to 400°F!.
2!. Cook and drain macaroni according to package directions; set aside!.
3!. In a large saucepan melt butter!.
4!. Add flour mixed with salt and pepper, using a whisk to stir until well blended!.
5!. Pour milk and cream in gradually; stirring constantly!.
6!. Bring to boiling point and boil 2 minutes (stirring constantly)!.
7!. Reduce heat and cook (stirring constantly) 10 minutes!.
8!. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts!.
9!. Turn off flame!.
10!. Add macaroni to the saucepan and toss to coat with the cheese sauce!.
11!. Transfer macaroni to a buttered baking dish!.
12!. Sprinkle with breadcrumbs!.
13!. Bake 20 minutes until the top is golden brown!.

(You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling!.Www@FoodAQ@Com

This is the recipe I make all the time out of the Dinner Doctor cookbook!. Instead of the store bought Alfredo sauce she uses, I make my own white sauce!. It's a 1/2 stick of butter, melted in a small saucepan!. I add a 1/4 c-1/2 c of flour, combing the two, then I add 2 cups of milk!. I stir this over the heat just until it starts to boil!. At this point it will thicken greatly, and be ready to put on!. Add some salt and pepper to taste!. Adding onion and garlic powder really helps, too!.

Home-style Macaroni and Cheese

8 servings

Vegetable oil cooking spray for misting the baking dish
8 ounces elbow macaroni
Salt (optional), for cooking the macaroni
1 (10-ounce) container refrigerated Alfredo-style pasta sauce
1 (12-ounce) package pre-shredded sharp cheddar cheese
1 tablespoon olive oil
1 cup coarse bread crumbs

Preheat the oven to 375 degrees!. Lightly mist an 11-by-7-inch (2-quart) glass or ceramic baking dish with vegetable oil cooking spray and set it aside!.

Bring a large pot of water to a boil over high heat!. Add salt, if using, and stir in the macaroni!. Reduce the heat to medium-high and cook the macaroni uncovered until al dente, about 8 minutes!. Drain the macaroni well in a colander, shaking it a few times to remove any water that might still cling to the pasta!.

Transfer the macaroni to the prepared baking dish!. Add the pasta sauce, 2 cups of the cheese, and stir until the ingredients are well combined!. Scatter the remaining 1 cup of cheese over the top!.

In a small bowl, toss the olive oil with the bread crumbs, and then scatter them on top of the cheese!.

Bake until the macaroni and cheese is bubbly and the bread crumbs are lightly browned, 25 to 30 minutes!. Serve at once!.

Ok here is the recipe I got from Justin Timberlake's restaraunt in memphis:

1lb elbow pasta, cooked n drained
1 stick margerine
1/2 cup flour
1!. T!. Worchestershire sauce
1/2 nutmeg
1/2 cayenne pepper
1/2 dry mustard
1/2 grated white cheddar
1/2 grated Monterey jack
1/2 grated Asiago cheese
1 cup finely chopped ham

preheat oven 350*
melt butter, add flour, stir in and keep stirring and add spices, stir well
add W!. sauce
add cheeses and stir well!.
pour mixture into a bowl and mix well, pour inro a large buttered 9 x 13 and bake 35 mins!.

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F!.
In a large pot of boiling, salted water cook the pasta to al dente!.
While the pasta is cooking, in a separate pot, melt the butter!. Whisk in the flour and mustard and keep it moving for about five minutes!. Make sure it's free of lumps!. Stir in the milk, onion, bay leaf, and paprika!. Simmer for ten minutes and remove the bay leaf!.
Temper in the egg!. Stir in 3/4 of the cheese!. Season with salt and pepper!. Fold the macaroni into the mix and pour into a 2-quart casserole dish!. Top with remaining cheese!.
Melt the butter in a saute pan and toss the bread crumbs to coat!. Top the macaroni with the bread crumbs!. Bake for 30 minutes!. Remove from oven and rest for five minutes before serving!.

here is a very simple recipie and its very rich and cheezi !.!.
in a blender :
1 1/2 cup of milk
2 eggs
1/2 teas mustard
1 tbl mayo
1 tbl butter
1/4 lb extra sharp cheese ( cut into small cubes )
salt and pepper to taste
blend all ingredients together !.( set aside)

1 box of elbow mac !. put to boil in bubbling hot water add a little salt and oil so it dosent stick together !.
Strain when cooked !.

add your cheese mixture to already cooked maccaroni elbows and simmer over a low fire while stiring untill cooked for 3 mins !.
Or you can place in a baking dish , sprinkle top with grated cheese and bake at 350 for 15 mins!. or until top is light brown !.Www@FoodAQ@Com

I have been making my mac and cheese for many years for the family events and holidays and it has gotten rave reviews!.

Very simple, but I don't have exact, but I will try here!.

I take the large elbow noodles and cook them up until al dente and put them into my buttered and salted and peppered casserole dish!. Then I take that same pan that I cooked the noodles in and put it back on the stove and take a big heaping tablespoon of butter and melt that and add in my flour to make a rou!. Then I add in my milk- enough to make a sauce for all the noodles!. May have to add a llittle four depending on how thick you like it!. I like my a little thicker than gravy!. I also add in my cheese mix to make it a cheesey sauce before pouring it over my noodles!.

Cheeses I grate up and use and I use a lot of cheese!.

I use a package of the mixed italian cheeses
Colby Jack Cheese
Longhorn cheddar cheese
Sharp Cheddar cheese

I grate all of these and put them in a large bowl and add some into the noodle mixture, some in the sauce, and some for the top!.

I ocassionally will top my mac and cheese with crushed corn flakes, or fried onions!.

Bake until golden brown on top!. It doesn't take long since it is cooked!.Www@FoodAQ@Com

3 tb Butter or margarine
1 sm Onion, finely chopped
2 tb Flour
1 t Salt

2 c Milk
2 1/2 c Shredded Cheddar cheese
-----TOPPING-----
1 Roll (hard crust sourdough
- or french roll)
2 tb Butter
3/4 c Shredded Cheddar cheese

Cook macaroni according to package directions!.

In large saucepan, melt butter!. Add onion and cook until tender!. Stir in flour, salt!. mustard, salt and pepper!. All milk slowly, stirring constantly, and cook until sauce is thickened and bubbly!. Add cheese and stir until melted!. Combine cooked macaroni and cheese mixture and mix
well!. Pour into buttered casserole!. (I use one that's about 12" square)!.

Top with topping and bake in 375 oven for 20 - 25 minutes!.

To make topping: tear roll apart and use steel blade of food processor to chop into fine bread crumbs!. Melt better in small saucepan then add crumbs and toss until covered with butter!. Combine buttered crumbs with cheese and
spread over casserole!.

Here is a vary simple yet good recipe!. Macaroni noodles!. New York extra sharp chedder cheese and milk!. Boil macaroni!. Cut up or grate cheese!. (Just be carefull if you cut the cheese)!. Just mix them together add a little milk and bake till the top starts to brown a little!.Www@FoodAQ@Com

My mom use to make homemade mac and cheese that was the best!. Boil macaroni noodles till done drain add velveta cheese chopped in squares and a little milk cook on stove medium heat stir often add as much cheese and milk to get the cosistancy and cheesy flavor you want!.Www@FoodAQ@Com
