Question: I can't remember what this sweet potato thing is called!.!.!. !?
When I was growing up!.!.!. (which wasn't too long ago!.!.!.lol) they used to have these sweet potato things!. Most usually found them at certain buffets!. Like little sweet potato bites!. I searched that!.!.!. but didn't get much sucess w/ finding a recipe that sounded right!. It was just a ball !.!.!. fried breading on the outside and like mashed sweet potato on the inside!. Does anyone know what they are actually called!?!?!?

That sounds like a simple sweet potato croquette!.

Ingredients:
2 cups mashed sweet potatoes, about 4 medium sweet potatoes
2 tablespoons butter
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons brown sugar
fine dry bread crumbs, plain
1 egg, slightly beaten
1 tablespoon water
oil for deep frying

Preparation:
Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended!. Chill thoroughly!. Shape chilled mixture into croquettes!. Mix slightly beaten egg with water!. Dip sweet potato croquettes into crumbs, then into beaten egg mixture, then in crumbs again!. Fry in hot deep fat, about 360°, until sweet potato croquettes are golden brown!. Drain well!. Recipe for sweet potato croquettes serves 4!.Www@FoodAQ@Com

Spicy Sweet Potato Balls
Yield: 6 servings

3 pounds sweet potatoes cooked or 2 (17 ounce) cans, drained
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
Miniature marshmallows
1/2 cup ginger snap crumbs

Preheat oven to 400 degrees F!.

Mash sweet potatoes while they are hot, then add, butter, salt, and spices!. Add egg and continue to whip until thoroughly combined!. Chill until firm!. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball!. Roll in ginger snap crumbs!. Place on non-stick or lightly greased baking sheet!. Bake for 10 to 15 minutes!.

POTATO POPPERS
Makes about 12!.

1/8 onion, chopped
1 c!. cooked brown rice
1 c!. whole grain bread crumbs
1/2 tsp!. salt
1 c!. mashed sweet potatoes
2 tbsp!. brown sugar

Preheat oven to 350 degrees!. Simmer onion in small amount water!. Combine all ingredients and form into 1 1/2" balls!. Bake until delicately browned; about 15 minutes!.

SWEET POTATO CROQUETTES
Serves 4

1 (1 lb!. 13 oz!.) can sweet potatoes
Dash of salt
4 slices pineapple, drained
2 tbsp!. butter, soft
1 c!. corn flakes

Preheat oven to 350 degrees!. Place cereal between 2 pieces of wax paper!. Roll with rolling pin to crush into semi-fine crumbs!. Drain and mash sweet potatoes!. Add salt and butter!. Mix together!. Form into croquettes!. Roll croquettes in crumbs!. Place pineapple in baking pan and place each croquette on top of a slice of pineapple!. Bake for 30 minutes!.
