Why do executive chefs and other chefs have signature dishes?!
I was watching HK a show by Gordon Ramsay and I noticed that every chef there had a signature dish including chef Gordon Ramsay, Why is that!?Www@FoodAQ@Com

A signature dish is a recipe that identifies an individual chef!. Ideally it should be unique and allow an informed gastronome to name the chef in a blind tasting!. It can be thought of as the culinary equivalent of an artist finding their own style, or an author finding their own voice!. In practice a chef's signature dish often changes with time or they may claim several signature dishes!.
In a weaker sense, a signature dish may become associated with an individual restaurant, particularly if the chef who created it has since moved on or died!. It can also be used to refer to a culinary region, in which case its meaning may be the equivalent of 'national dish'!.
At its weakest, in a mediocre restaurant, the term can simply mean 'Chef's Specials' which are in no way unique or even particularly unusual!.

That sounds funny, I am a former chef from Canada, I worked for 20+ years in the hotel and restaurant trade and cannot really say I had a signature dish, I found that it was better to accomplish many cuisines and dishes over one to be famous for, as these celebrity chefs have gotten notariity, they develop dishes for there palate and serve them in the guise of a signature dish!.
Many chef shy away from that as it is all to easy for someone to steal it, modify it slightly and make it there own, Paul Bocuse invented the "Truffle Soup under Pastry" in the 1970 for the President of France, and it has been made every since, most pay omage to him for it, but I have seen it debased a number of times from the original!.Www@FoodAQ@Com

Because these are the dishes that they have mastered!.!.!.They can make this dish better than any other!.!.!.It's very common to have signature dishes!.!.!.
