Steak shrinkage!?!


Question: Steak shrinkage!!?
Whenever i try to cook steak it always shrinks! It goes tough and yukky How can i make a nice steak that stay normal size!?!?Www@FoodAQ@Com

it's the cut of steak you are buying!.!.Get t-bone or new strip season both sides put alittle oil in a pan along with your steak cook on a med heat about 7 mins on each side depending how you like your steak!. And remember never never put a cold steak in a hot pan!.!.Let your steak get room temp before cooking it!.

the reason your steak is shrinking is because of the water content the more you cook food the more water/juices will come out/evaporate this is the same for any meat if you cook two steak of equal size and weight one well done and one medium the well done one will always end up smaller and dryer try get your meat from a good supplier and make sure it has been hung/matured for 28 days i also wouldn't cook any further than medium and let your steak rest after cooking so the fibers in the meat can relax try get the right cut of meat as well such as rib eye sirloin rump or fillet

you can leave your steak out at ambient temperature (room) for up ten minutes as long as the core temperature does not exceed 8 degrees Celsius these are the restaurant food guide lines in the UKWww@FoodAQ@Com

you maybe are cooking it to long or cooking it at the wrong temperature try cooking at a lower temperature or slow the cooking time down oh and don't let it sit to room temperature it can gain bacteria quick bacteria grows at a rate of 12 per sec and doubles to about 3million in a matter of minutesWww@FoodAQ@Com
