Answers:
Beef Enchilada Casserole

1 pound ground beef
1 small onion, chopped
1 can enchilada sauce
1 can cream of celery soup
1 tsp!. chopped jalapeno, optional
7-8 Corn tortillas
2 cups shredded cheddar cheese

Brown ground beef; drain off grease!. Add onion and cook until tender!. Add enchilada sauce, soup, and peppers, heating thoroughly!. Place 4 corn tortillas in the bottom of a greased deep-dish 9” pie plate, allowing the edge to wrap up the sides of the pie plate!. Spoon a third of beef mixture on top!. Place tortilla in center on top of beef, spoon another third of beef mixture on top; top with last 2-3 tortillas, tearing to fit, and the rest of meat mixture!. Cover with grated cheddar cheese on top!. Bake at 300oF until cheese melts and casserole is bubbly, about 20 min!.

Deep Dish Taco Squares

2 cups biscuit mix
? cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1? pounds ground beef
? green or red bell pepper – finely chopped**
2 Tbsp!. chopped onion**
1 pkg taco seasoning mix (? cup)
1 (8-oz) can tomato sauce
? cup mild salsa
2 cups shredded cheddar cheese

Combine biscuit mix and water, stirring with a fork until blended!. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish!. Bake at 375oF for 9 minutes!.
Combine sour cream and Ranch dressing!. Spread over baked crust and set aside!.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well!. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling!.
Sprinkle cheese evenly over meat mixture!. Bake at 375oF, uncovered, for 20 minutes or until casserole is lightly browned!. Cut into 12 squares to serve!.

** If serving to picky children, you can omit the bellpepper and use 2 tsp!. onion powder instead of fresh onions!. Omit salsa and add a second can of plain tomato sauce!.

Mama's Cheesy Meatloaf

1 lb!. ground chuck
1 egg, beaten
2 tbls!. worcestershire sauce
1 cup ketchup
1/2 tsp!. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)

Mix all ingredients, except cheese!. Press meat out onto plastic wrap about 1/2 inch thick!. Sprinkle cheese over meat evenly!. Roll up the meatloaf, jelly roll style!. Tuck in the ends, and secure with LOTS of toothpicks!. Bake at 350 degrees for about 45 min!.

Sauce:
?cup ketchup
? cup mustard
? cup brown sugar

Combine, and heat thoroughly!. About 15 min!. or 20 min!. before meatloaf is done, pour on some of the sauce, and finish baking!. Keep the rest to pour onto the meatloaf slices at the table!.

Skillet Lasagna (aka Hamburger Helper)

1 lb!. lean ground beef
? cu p chopped onion
? cup chopped carrots
1? cups mafalda (mini-lasagna noodles or other pasta)
1? cups water
? tsp!. Italian seasoning blend
2 cups marinara or other tomato-based pasta sauce
8 oz!. fresh sliced mushrooms
1/3 cup or more shredded mozzarella cheese

Cook lean ground beef, chopped onion and chopped carrots in a Dutch oven on medium-high about 6 minutes or until beef is no longer pink!. Drain!. Stir in raw pasta, water, Italian seasoning, pasta sauce mushrooms!. Heat to boiling, stirring occasionally!. Reduce heat to low; simmer, uncovered, 10 minutes or until pasta is tender!. Tater Tot Casserole!. Cook ground beef with a chopped onion and drain!. In a meatloaf pan put a single layer of tater tots, top with some of the hamburger mixture and top that with shredded cheese!. Keep making the layers with the top layer being tater tots!. Combine 1 can of cream of mushroom soup with 1/2 cup milk and heat until well mixed and bubbling!. Pour over meat and tater tots!. Place in 350 degree preheated oven for about 25 minutes!.
This can also be made in a large sheet cake pan for a larger crowd!. It is really good and inexpensive to make!.Www@FoodAQ@Com

You can make porcupine balls!. Mix the raw meat with one cup of rice, breadcrumbs (or crushed cracker or oatmeal), and any seasonings you like!. I usually pan fry them for a couple of minutes just to sear the outside then I boil them for about 15 to 20 minutes to cook them all the way thru!. Then I make a packaged gravy mix and put the meatballs in and serve over rice or pasta!. Or you can cook the ground beef and set aside, Then boil 4 cups of water, add 2 cups of rice, the cooked ground beef, corn, green beans,mushrooms, whatever veggies you like and simmer until the liquid is absorbed!. Usually, 20 mins!. Salt and pepper to taste!. Both are really easy and filling and cheap!.Www@FoodAQ@Com

Meatballs:- Curried
1 lb!. ground beef
2 tsp!. curry powder
1/2 c!. butter
Freshly ground black pepper
1 c!. stuffing mix
Salt to season to taste
Mix beef, curry powder, stuffing mix, salt and pepper together!. Shape into 32 small balls and sauté in butter over high heat for 5 minutes until brown!. Drain!.Www@FoodAQ@Com
