Question: Recipe to cook salmon with basic ingredients in the house!?
Answers:
I bake my salmon 2 different ways!. The first, is to make a mixture of these three items in these quantities in parts (yes parts - so if you use 3 T for the first then it's all T):

3 T brown sugar
2 T butter
1 T lemon juice

Melt the butter, stir in the brown sugar and lemon juice and mix well!. Spread over your salmon in a piece of aluminum foil, seal it up, place it either in a cake pan or on a cookie sheet and bake 400o for 20 minutes if using 8 oz of salmon!. The time works for up to 4 pieces of salmon - each 8 oz!.

The second way I like it is to either spread a thick coating of mayonnaise or a mixture of half mayonnaise/half sour cream over the salmon and sprinkle it with onion powder, dill, and black pepper (can use white pepper)!. Do all that on a piece of foil, wrap it up, place in cake pan or cookie sheet and bake 400o 30 minutes for 8 oz pieces!. The coating causes it to take longer to cook than the first way!.

I also like to make a mixture of paprika, garlic powder, black pepper, onion powder, and a dash of sugar, mix well, and sprinkle over raw potatoes cut into the steak fries!. I spray the fries, then sprinkle on that mixture, turn to coat, spray again and coat again!. I place the fries on a mesh screen on top of a cookie sheet and put it in the oven at the same time as the fish coated with the mayo topping - both are done at the same time and you don't have to turn the fries!. If you don't have a mesh screen, you will have to turn them after placing on a sprayed cookie sheet to bake!.

I like to serve the fish and fries with homemade tartar sauce:

TARTAR SAUCE

Take a custard cup, grind in some fresh-ground black pepper!. Add a couple of shakes of onion powder and a shake or two of dill!. Then I add a teaspoonful of pickle relish (dill or sweet - your choice) and a couple of heaping tablespoonfuls of mayonnaise!. Mix it all up and you're ready to go!.Www@FoodAQ@Com

mince up a bunch of garlic,,a few chives and some butter,sqeeze some lemon juice in there,,wrap in tin foil,,but the trick is to make like a tin foil pocket,,don't just wrap it tight leave some air space in there, think like a TeePee,, bake in the oven at 300 for about 12-15 minutes,,The foil pocket steams the juices of lemon, butter and garlic with the fish and kees it very moist!.!.

if you like spicy food, you can cookonthe grill, or in a saute pan with bbq sauce,,seriously,,just cut the sauce with a bit of olive oil,,it sounds weird, but is very good!.!.

both can be served with rice and a nice salad,,perfect summer meal!.!.Www@FoodAQ@Com

broil it salt and pepper to taste!.salmon is best made plain!.the flavor is fine alone!.you can serve it with clarified butter!.serve it over a rice pilaf!.you can make a honey glaze,use cream of asparagus soup and thin thin it out and put it over top!.but as i said salmon is best served solo!.Www@FoodAQ@Com

It would help to know if salmon is canned or fresh/frozen steaks!.

Canned: add an egg, spices you like, bread crumbs, form into patties and bake or fry!.

Fresh: marinate in lemon juice (use powdered drink is OK), seasoning of choice, bake, broil or grill

I put the fish in foil with lemon slices onion & tomato, then put it on the grill for minutes and it is delious!. If I have capers and basil lying around I throw that in sometimes as well!.Www@FoodAQ@Com

I personally like to sear it in a pan with just a touch of olive oil!.!.!. although poaching is my second favorite!. Salmon has such a great flavor it doesn't really need anything added!Www@FoodAQ@Com

if you have water you can poach the salmon and just season with salt and pepper!.Www@FoodAQ@Com
