Know any good sauces for salmon?!


Question: Know any good sauces for salmon!?
I love the sauce they use at Cafe Med (bakersfield CA) but I cant figure out what it is!. Its really creamy and buttery!.
Does anyone know of a sauce that compliments salmon or other fish!?Www@FoodAQ@Com

I've used this recipe for about 30 years! (learned it at cooking classes at a very upscale restaurant in Orange County) !.!.!.!.!.

equal portions of Dijon mustard and mayonnaise; add LOTS of dried dillweed and mix well!.!.!.!.!. I usually use about 1/2 c!. each mustard/mayo (sometimes I'll use sour cream instead of mayo) and 2 TB!. dried dillweed!.!.!.!.!.!.!.!.It's also an excellent dip for vegetables!.!.!.!.!.!.!.!.!.AND, if you have leftover salmon, you can mix it well with some of the sauce and make salmon salad for sandwiches!Www@FoodAQ@Com

GRILLED SALMON WITH CABERNET SAUVIGNON
SAUCE

FOR THE SAUCE:

1/4 tsp!. fresh squeezed lemon juice
2 tbsp!. olive oil
1/2 c!. Cabernet sauvignon wine
1/2 c!. beef stock
1/2 c!. chicken stock
2 shallots
2 tbsp!. butter
Salt & pepper to taste
6 portions of salmon fillet, 8 oz!. each

Chop shallots and place in a saucepan with the wine!. Reduce by about 2/3!. Add beef and chicken stock and reduce by 1/2; set aside!. Brush the salmon fillets with olive oil and season with salt and pepper!. Place on a grill for about 2 minutes on each side!. Return sauce to the stove and incorporate butter; strain and add the lemon juice!. Place salmon fillets on plates and nap with the sauce!.

Honey Pepper is good!.!.
3/4 cup honey
1/3 cup soy sauce
1/4 cup dark brown sugar, packed
1/4 cup pineapple juice
1 lemon, juiced
2 tablespoons white distilled vinegar
2 teaspoons olive oil
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder

Dill Mustard Sauce is good too!.!.

2tablespoons fresh lemon juice
2tablespoons fresh lime juice
1/4cup fat-free mayonnaise
1tablespoon Dijon mustard
1tablespoon chopped fresh dill

But my favorite is Creamy Horseradish!.!.
3/4 cup sour cream
1/4 cup mayonnaise
2 tablespoons prepared white horseradish
2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon soy sauceWww@FoodAQ@Com

You can make a mango-lime chutney!.

Dice the following:
mango
red onion
garlic
cucumber (seeds removed)

Add some:
lime juice
red wine vinegar
salt
black pepper
red pepper flakes

Make everything to your liking as to taste and texture!. Cover and refrigerate until ready to use!.Www@FoodAQ@Com

Here is my absolute favourite
Olive oil
lemon juice
prepared mustard
dill finely cut
fresh onions finely cut
capers
Mix every thing together except capers!.Use them on top for presentation!.

if you want something light and easy just use about 3 parts low sodium soy, 1 part sesame oil and some fresh grated ginger!. it's terrific!.Www@FoodAQ@Com

usually i eat it with either ketchup, tartor sauce or just squeeze lemon on it,
