Tuna Carbonara
This simple and delicious recipe is ready to eat n about 20 minutes!.

INGREDIENTS:
8 oz!. spaghetti pasta
4 eggs, beaten
2 Tbsp!. butter, melted
2 Tbsp!. olive oil
1 red bell pepper, cut into strips
3 cloves minced garlic
1/2 cup chopped red onion
6 oz!. can white tuna, drained
1 cup grated Parmesan cheese
1/4 cup chopped parsley
PREPARATION:
Cook pasta according to package directions!. Meanwhile, beat eggs in large bowl!. In large saucepan, melt butter and oil and saute pepper and garlic until tender!.
When pasta is al dente, drain and add immediately to pan with sauteed peppers!.

Add tuna and cook, stirring, until heated through!. Add eggs, cheese, and parsley to pan!. Cook and stir, lifting pasta to allow sauce to coat thoroughly!. Serves 4

Tuna and Rice Salad

INGREDIENTS:

* 2 cans white tuna, drained, (12 to 14 ounces total)
* juice of 1 lime
* 1 can (2 1/4 ounces) sliced ripe olives, drained
* 1 can (14 ounces) artichoke hearts, drained and quartered
* 2 cups cooked long-grain rice, chilled
* 1/2 cup mayonnaise
* 2 teaspoons dried dill weed

PREPARATION:
In a mixing bowl, break up tuna with a fork!. Sprinkle lime juice over the tuna; mix well!. Fold in the sliced olives, quartered artichoke hearts, and rice!. Add mayonnaise and stir in dill weed!.
Serves 6!.

Cool 'n Creamy Tuna Pockets


Ingredients
1 packet Cool 'n Creamy Cucumber
1/2 cup mayonnaise
1/2 cup sour cream
2 (9 oz!.) cans drained tuna
2 stalks chopped celery
1/4 cup chopped red onion
1/4 cup chopped red walnuts
4 small wheat pita bread
Lettuce (optional)

Directions
Combine first 3 ingredients as directed on package; add following 4 ingredients and mix well!. Spoon mixture into pita pockets; garnish with lettuce, if desired!. Makes 4 pita pockets!.

******CANNED TUNA WITH EGGPLANT SUPPER
1 med!. to lg!. eggplant
1 lg!. can crushed tomatoes
2 cans tuna in water
1 can chick peas
1/2 c!. green olives, pitted with pimientos
1 lg!. clove garlic, minced
1 tbsp!. oregano
1/2 c!. white wine
1!. Peel and cut eggplant into small pieces!.
2!. Put tomatoes, eggplant, garlic and oregano into large saucepot to simmer (cover)!.
3!. Drain tuna, drain olives and drain and rinse chick peas!.
4!. After 15 minutes, add other ingredients to eggplant mixture, along with white wine!. Simmer until eggplant is tender continue 10 minutes!.
This is great as main dish with bread and salad!. It also works well over pasta!.

*******SAUCY CANNED TUNA BAKE
2 c!. Bisquick baking mix
1 c!. shredded cheddar cheese (about 4 oz!.)
1/2 c!. cold water
1 (6 1/2 oz!.) can tuna, drained
1 (2 1/4 oz!.) can sliced ripe olives, drained (about 1/2 c!.)
1/2 c!. chopped celery
1/4 c!. chopped onion
1 (2 oz!.) jar diced pimiento, drained
1 (10 3/4 oz!.) can condensed cream of celery soup
1/4 c!. milk
Heat oven to 425 degrees!. Grease square 9"x9"x2" pan!. Mix baking mix, 1/2 cup of the cheese and the water until soft dough forms; beat vigorously 20 strokes!. Pat dough in pan with floured hands, pressing 1/2" up sides!.
Mix tuna, olives, celery, onion, pimiento and 1/4 cup of the soup; spread over dough!. Bake until edges are light brown, about 15 minutes!.
Heat remaining soup, remaining 1/2 cup cheese and the milk over medium heat, stirring occasionally, until hot!. Serve over casserole!. 6 to 8 servings!.

********GRILLED TUNA SANTA FE
1/2 c!. fresh lime juice
1/2 c!. beer
4 tsp!. cumin
1/2 tsp!. salt
Fresh tuna fillets or steaks for each person
Sliced avocado, salsa (optional)
4 cloves garlic, minced
3 tbsp!. oil
4 tsp!. Dijon mustard
Combine lime juice, beer, oil, cumin, mustard, salt and garlic in a large shallow dish!. Marinate for 2 hours, turning occasionally!. Grill on preheated BBQ, approximately 5 minutes each side!. Serve with salsa and a slice of avocado, if desired!.

Basic tuna salad: Albacore tuna in water!. Drain, put in small bowl or container and loosen with a fork!. Add 1 sm!. grated onion, 1 heaping tsp!. of sw!. pickle relish, chopped celery, parsley, crushed tarragon (optional), mayo!.

Another tuna salad!. Drain the albacore tuna, flake lightly with a fork!. Add celery, chopped red onion, diced sharp cheese, walnuts, raisins and dressing of choice!.!.!. mayonnaise based mixed with a honey mustard, a little vinegar and a dash of sugar/sweetener is nice or other thicker type dressing that coats nicely is best I think!. A light balsamic dressing, or strawberry vinaigrette!.

There are many hot dishes that can be prepared!. You can use a egg noodles with a cream sauce and parmesan or romano cheese with chopped celery, grated onion, parsley, tuna salt & pepper!. Put it in a baking dish!. Sprinkle top cheese and bake until bubbly and browning on top!. You could also make that with elbow macaroni, or add a can of cream of mushroom soup or other "cream of" soup of choice to the mixture for more flavor!. Italian Style Tuna Fish - Mmmmmm

2 Small Cans Tuna
1 Large Plum Tomato
1/2 Red Onion
3 Filets of Anchovy
10 Pitted Green Olives
1/2 Cup Extra Virgin Olive Oil
Salt and Pepper

Drain cans of tuna well and place into a large mixing bowl!.

Chop all other ingredients into small pieces!. Then mix them together!.

Add tuna and chopped ingredients into the mixing bowl!. Season with salt and pepper as desired!. Add olive oil and stir together!. If more than 1/2 cup of olive oil is necessary, then add to taste!. It should entirely coat the tuna mixture without being too greasy!.

Place over the top of Salad Greens or spread on top of your favorite bread!. Any bread choice will be fine because the recipe is so versatile!.

Or sometimes I dice tomato and jalapeno in small cubes, add onion, salt pepper and mayo and mix it all with tuna!.

lots of lemon juice, mayo and ranch dressing, and some kind of lemon marinade if you have any,onions, lots of fresh cracked pepper and salt!! and herbs if you want extra flavor! i think any would work well with tuna!Www@FoodAQ@Com

I like it with chopped celery and onions (and mayo of course), but I'm usually to lazy to chop them up when I'm making a can!. I like a decent amount of pepper as well!.Www@FoodAQ@Com
