If you have an abundance of hot peppers and need to preserve them for later, the easiest, and the very best method is to simply wash & dry them!. Place the whole, uncut peppers out on a baking sheet (making sure that none of the peppers are touching!.) Do not cover!. Place the baking sheet in the freezer and freeze until solid!. Remove the frozen whole peppers from the baking sheet and place in freezer bags!. Put only the amount of peppers needed for your recipe in each bag, seal and freeze!. No need to unthaw before using!. Just chop them up and throw them in the mix- they'll unthaw quickly! This same method is also a fantastic way to preserve tomatoes for later (for chili, spaghetti sauce, etc!.) For tomatoes, do the same as above, and do not skin the tomatoes before freezing as this also protects the flavor!. Once you try this easy method you'll NEVER preserve them any other way- I guarantee it!Www@FoodAQ@Com

You can dry them in the oven then they last a long time if you keep them dry!. Set the oven at about 140 degrees or so!. Place the peppers on a cookie sheet and spread them out so they are not on top of each other!. It may take several hours!. When they feel dry and hard they are done!. If they start to burn or blacken , you left them in too long or turn the heat down a bit!. If they are still soft or mushy they haven't dried yet!. Their color shouldn't change much at all if done right!. You may want to remove any stems before drying simply because its easier to do!. The best way to store them is in open air someplace dry!. I have mine hanging in a wire basket in the kitchen!. I have had some for over a year and they are still edible though I would recommend drying only what you can use in a few months!. If thouroughly dried, they can be crushed and ground into a course or fine powder easily and stored in a jar!. I save store bought spice jars when empty and use them!.

This seems to work with any pepper though I've only done it with smaller ones such as jalepenos or chile peppers!.Www@FoodAQ@Com

WHy not make hot pepper sauce!? Stuff a jar with clean whole or sliced peppers!. Pour in boiling vinager to top!. Put the top on the jar and let sit 3 weeks before using!. When it gets low on juice add more boiling vinager and let sit a few days!.Www@FoodAQ@Com

Have they been cooked!? If so, freezing ziploc works!. Your good for up to 3 months!. You can also freeze fresh pepp's, but not for as long!. I'd say!.!.!.!.two weeks fresh frozen!.!.!?Www@FoodAQ@Com

Put them in a zip lock bag and freeze them!
