Pinapple cookie recipe anyone?!


Question: Pinapple cookie recipe anyone!?
My grandna used to make pineapple cookies ,they were really soft and very moist with lots of crushed pineapple in them and pretty thick as I remember!.This would be an old recipe!.Www@FoodAQ@Com

COOKIE INGREDIENTS:
2 1/2 cups all-purpose flour
1 cup sugar
1/2 cup solid shortening
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup crushed pineapple, drained (juice reserved)
1 large egg

For cookies, combine flour, sugar, shortening, baking powder, baking soda, pineapple and egg!. Mix well!. Drop by teaspoon onto greased baking sheets!. Bake at 350 degrees for 10 to 12 minutes!. Remove to wire rack to cool completely!.


FROSTING INGREDIENTS:
2 cups powdered sugar
4 Tablespoons pineapple juice
1 teaspoon vanilla
1/4 cup butter, softened

For frosting, combine powdered sugar, pineapple juice, vanilla and butter!. Beat well!. Frost cooled cookies!.

Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture!. Drop by rounded spoonfuls onto the prepared cookie sheet!.
