Question: Who knows a really nice recipe for raspberry and white chocolate muffins!?
Answers:
1 cup milk
1/2 cup butter, melted
1 egg, slightly beaten
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup fresh raspberry or frozen raspberries (do not thaw)
1/2 cup white chocolate chip
Muffin topping
1/4 cup butter, melted
1/4 cup sugar

Grease 12 muffin tin cups!.
Heat oven to 400°!.
In a large bowl mix the milk, butter and egg!.
Stir in all remaining muffin ingredients except raspberries & white chocolate chips!.
Stir only until flour is moistened,then gently stir in the berries & chips!.
Spoon the batter into the greased muffin tins!.
Bake for 24-28 minutes or until golden brown!.
Let muffins cool a little, then remove from pan!.
Dip top of each muffin top in melted butter, then in sugar!.Www@FoodAQ@Com

This is a multi-purpose muffin mix, you can use it to make sweet or savory muffins!. You may need to slightly adjust flour/oil quantities for wet or dry additives e!.g!.!. a fruit puree but this can be added to the basic mix to get it right!.

250g Self-raising flour
1 egg
1 (250 ml) cup milk
60 ml Oil (vegetable)

Mix to barely combined, a little unmixed flour adds to texture!. Spoon into muffin pans & bake 175°C for 15-20 minutes!.
For White Chocolate & Raspberry, stir in a cup or fresh or frozen Raspberries & 100g of melted white chocolate buttons!.
If you find the white chocolate won't melt, add a little oil!.Www@FoodAQ@Com

This is the recipe I use and I substitute white chocolate!.!.!.!.

Raspberry Chocolate Muffins

1 2/3 cups all-purpose flour
3/4 cup quick-cooking oats
2/3 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 egg, lightly beaten
3/4 cup fat-free milk
1/3 cup canola oil
2 tablespoons orange juice
1 teaspoon vanilla extract
3/4 cup fresh or frozen unsweetened raspberries
1/2 cup miniature semisweet chocolate chips

DIRECTIONS
In a large bowl, combine the first six ingredients!. Combine the egg, milk, oil, orange juice and vanilla; stir into dry ingredients just until moistened!. Fold in raspberries and chocolate chips!. Fill paper-lined muffin cups or cups coated with nonstick cooking spray two-thirds full!.
Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean!. Cool for 5 minutes before removing from pan to a wire rack!.Www@FoodAQ@Com
