Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze

If you like, you can omit the bacon topping from the loaf!. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking!. Serves 6 to 8

Brown Sugar - Ketchup Glaze
1/2 cup ketchup or chili sauce
4 Tbsp!.s brown sugar
4 Tbsp!.s cider vinegar or white vinegar

Meat Loaf
2 tsp!. vegetable oil
1 medium onion , chopped medium
2 medium cloves of garlic , minced
2 large eggs
? tsp!. dried thyme
1 tsp!. table salt
? tsp!. ground black pepper
2 tsp!. Dijon mustard
2 tsp!. Worcestershire sauce
1/4 tsp!. hot pepper sauce
? cup whole milk or plain yogurt
1 pound ground chuck
? pound ground pork
? pound ground veal
2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
1/3 cup fresh parsley leaf , minced
8-12 slices bacon

1!. For the glaze: Mix all ingredients in small saucepan; set aside!.

2!. For the meat loaf: Heat oven to 350 degrees!. Heat oil in medium skillet!. Add onion and garlic; sauté until softened, about 5 minutes!. Set aside to cool while preparing remaining ingredients!.

3!. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt!. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl!. (If mixture sticks, add additional milk or yogurt, a couple Tbsp!.s at a time until mix no longer sticks!.)

4!. Turn meat mixture onto work surface!. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape!. Place on foil-lined (for easy cleanup) shallow baking pan!. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf !.

5!. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour!. Cool at least 20 minutes!. Simmer remaining glaze over medium heat until thickened slightly!. Slice meat loaf and serve with extra glaze passed separately!.

Mama's Cheesy Meatloaf

1 lb!. ground chuck
1 egg, beaten
2 tbls!. worcestershire sauce
1 cup ketchup
1/2 tsp!. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)

Mix all ingredients, except cheese!. Press meat out onto plastic wrap about 1/2 inch thick!. Sprinkle cheese over meat evenly!. Roll up the meatloaf, jelly roll style!. Tuck in the ends, and secure with LOTS of toothpicks!. Bake at 350 degrees for about 45 min!.

Sauce:
?cup ketchup
? cup mustard
? cup brown sugar

Combine, and heat thoroughly!. About 15 min!. or 20 min!. before meatloaf is done, pour on some of the sauce, and finish baking!. Keep the rest to pour onto the meatloaf slices at the table!.

(CAMPBELL'S) BEST-EVER MEAT LOAF

1 can Campbell's condensed Golden Mushroom Soup, divided (not as good w/ plain mushroom soup)
2 lbs ground chuck
1/2 cup fine dry bread crumbs
1 egg, beaten
1/3 cup finely chopped onion
1 tbsp!. Worcestershire sauce
1/3 cup water

In large bowl, thoroughly mix 1/2 cup of the soup, the beef, bread crumbs, egg, onion & Worcestershire!. In 12 x 8" baking pan, firmly shape meat into 8 x 4" loaf!.

Bake at 350 degrees for 1 1/4 hours or until done!. Remove meat loaf to platter, keep warm!.

Spoon off all but 3 tbsp!. drippings from pan!. Stir remaining soup & the water into drippings in pan, scraping up brown bits from bottom!. Over medium heat, heat soup mixture until hot, stirring constantly Serve gravy with meat loaf!.

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey


Heat oven to 325 degrees F!.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme!. Pulse until the mixture is of a fine texture!. Place this mixture into a large bowl!. Combine the onion, carrot, garlic, and red pepper in the food processor bowl!. Pulse until the mixture is finely chopped, but not pureed!. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture!. Season the meat mixture with the kosher salt!. Add the egg and combine thoroughly, but avoid squeezing the meat!.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf!. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray!. Insert a temperature probe at a 45 degree angle into the top of the meatloaf!. Avoid touching the bottom of the tray with the probe!. Set the probe for 155 degrees!.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey!. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes!.Www@FoodAQ@Com

Finally, I really like the Atkins meatloaf but made with part beef and part ground lamb and I removed all the "low carb" specialty ingredients!.

ATKINSLIKE MEATLOAF
2 pounds ground beef
4 ounces cheddar cheese, shredded
1/3 cup ketchup
2 eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon dried cilantro, or 2 tablespoons fresh
1 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste

Topping:
1/4 cup ketchup
1 tsp onion powder
1 TBSP brown sugar

Mix the meatloaf ingredients with the doughhook of your mixer or by hand!. Form into loaf!. Brush glaze over top and bake in 350 degree oven 50-75 minutes or until internal thermometer reaches 145o!. It will continue to cook after removal from oven!.

My 3 favorite meatloaf recipes:

Stovetop meatloaf
2 pounds of hamburger
2 eggs
1 cup of water
1 box of stovetop stuffing
1 cup of bbq sauce
Do not prep the stovetop!. Mix all ingredients into a bowl!. Put in 9x9 pan!. Cook on 375 degrees for 45 -60 minutes!. It's very moist, and flavorful!.

Cheddar Meatloaf
1 large egg
3/4 cup milk
4 ounces cheddar cheese, shredded
1/2 cup instant oatmeal
1/2 cup chopped onion
1 teaspoon salt
1 pound ground beef
1 1/2 cups ketchup, divided
1/2 cup brown sugar, packed
1 1/2 teaspoon prepared mustard

In a bowl, beat the egg and milk!. Stir in 1/2 cup ketchup, cheese, oats, onion and salt!. Add beef and mix well!.
Get a muffin pan, and get a cookie or ice cream scooper and fill greased muffin cups!. Combine ketchup, brown sugar and mustard (or just use bbq sauce)!. Spoon over meat!. Bake, uncovered for 45 minutes at 350F or until meat is no longer pink!. makes 12 patties!.
Combine remaining ketchup, brown sugar and mustard; spoon over loaves!.

Meatloaf with Brown Sugar-Ketchup Glaze
Glaze
1/2 c Ketchup or chili sauce
4 t Brown sugar
4 tsp Cider vinegar
Meatloaf
2 tsp Vegetable oil
1 Medium onion,chopped
2 Garlic cloves, minced

? tsp Ground black pepper

2 lb Meat mix (50% ground beef; 25% ground pork, 25% ground veal) **when I made this I made 50% gr beef ; 50% sausage/ground pork!.!.**
2/3 cup Crushed saline crackers or quick oatmeal (or 1 1/3 cup fresh bread crumbs)
1/3 cup Minced fresh parsley leaves
8oz thin -sliced bacon (8-12 slices, depending on loaf shape)

Preparation
1!. Glaze: mix all ingredients in small bowel; set aside

2!. Meatloaf: Preheat oven to 350°F!. Heat oil in medium skillet!. add onion and garlic, suate until softened, about 5 minutes; set aside to cool!.

3!. Mix eggs with thyme, salt, pepper, mustard, Worcestershire, pepper sauce, and milk or yogurt!. Add egg mixture to meat in a large bowl, along with cracker/bread selection, parsley and cooked onions and garlic; mix with fork until evenly blended and milk mixture does not stick to bowl!. (If mixture does stick, add additional milk, a couple of tablespoons at a time, and continue stirring until mixture stops sticking!.)


4!. Turn meat mixture into a loaf pan (preferably one with a perforated bottom and drip pan)!. Use a fork to pull mixture away from pan sides!. brush mixture with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly & tucking only bacon tip ends under loaf!. Bake until bacon is crispy & loaf registers 160 degrees (about 1 hour)!. Brush with remaining glaze and continue to bake until second coat has set, about 15 minutes longer!.Www@FoodAQ@Com

1 medium onion chopped
2 beaten egg
6 T Worcestershire sauce
1/4 to 1/3 bag oyster crackers crushed
salt and pepper to taste
1/2 C ketchup
2 tsp dried mustard
1 tsp vinegar
6 T brown sugar

pre heat oven to 350*
Mix your beaten egg and Worcestershire together
add the crushed crackers along with chopped onion, & salt and pepper to taste
In large bowl mix your ground round with your cracker mixture by hand until well blended!.!.!.!.*Hint* take off your rings or use gloves!.
form into loaf into loaf pan or any other pan with high enough sides to keep your grease in pan!.
Place in preheated oven and bake for 45 minutes!.!.!.While you are baking your meat loaf, in a small bowl take your ketchup, dried mustard, vinegar and brown sugar and mixed them together until smooth!.!.!.
When your loaf has baked for 45 minutes drain off excess fat!.!.pour or spoon 1/2 of the ketchup mixture over the meat loaf and spread evenly over top!.!.!.place back in 350 oven for the last 15 minutes!.!.!.!.
I make extra of the sauce because my family loves to add more to the meat at the table!.!.!.

I like things simple and easy!.

2 lbs lean ground beef
1 medium chopped onion
2 eggs
1 8 oz can tomato sauce
4-5 splashes of Worcestershire sauce (I never measure this!.!.!.I just splash it in)
about 3/4 of a stack of good saltine crackers, crumbled

You want a consistency that is not too dry, but not sloppy wet!. Add more crackers if it's too wet!. Add some ketchup if it's too dry!.

Mix all the ingredients well!. Form into a loaf shape on a baking sheet with edges, because you will get juice out of it!.
Bake at 350 degrees F for an hour!. Remove from the oven and slather the top with 1/4 cup chili sauce mixed with 1 Tablespoon of brown sugar!. Bake another 10 minutes!.Www@FoodAQ@Com

11/2 capfuls of Mrs!. Dash seasoning-the kind with yellow cap
3/4 of a can campbells tomato soup
salt and pepper to taste
2 eggs
2 cups bread crumbs

Meatloaf with Tomato Relish

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices


Preheat the oven to 350 degrees F!.
Coat a skillet with a 2-count of oil and place over medium heat!. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor!. Throw in the red peppers and cook them for a couple of minutes to soften!. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating!. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper!. Simmer the relish for 5 minutes to pull all the flavors together!. Remove it from the heat; you should have about 4 cups of relish!.

Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together!.

This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper!. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture!. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency!. Taste the patty for seasoning!.

Lightly oil a cookie sheet!. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide!. Coat the top of the meatloaf with another 1/2 cup of the tomato relish!. Lay the bacon across the top lengthwise!.

Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm!. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly!. Remove the meatloaf from the oven and let it cool a bit before slicing!. Serve with the remaining tomato relish on the side!. Unbelievably moist!

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours!.

Vegetable oil spray
4 slices whole-wheat bread
1/4 cup heavy cream
2 pounds ground turkey
1cup grated onion
1/2 cup diced celery
1/4 cup minced fresh parsley
2 eggs
1 cup canned stewed tomatoes, crushed
1 teaspoon finely minced and seeded fresh jalape?o pepper, or to taste
6 tablespoons ketchup

Directions:
Preheat oven to 350o F!. Lightly spray a 91/2-x-51/2-x-3 inch loaf pan with vegetable oil or use a nonstick pan!.

Place bread in a blender or the work bowl of a food processor fitted with a metal blade and process into fine crumbs!.

In a shallow bowl, combine bread crumbs and milk!. Let bread soak 5 minutes!.

In a large bowl, combine all remaining ingredients except ketchup!. Mix lightly!. Set aside!.
Drain bread and squeeze out excess milk to form a paste!. Add to meat mixture and blend well!.
Pack lightly into the prepared loaf pan!. Spread ketchup over top of loaf!.

Bake uncovered 11/4 hours!. Let sit out 5 minutes before serving

a more "non-traditional" meatloaf!. It's delicious!

2 lbs ground beef
1 onion, chopped
1 green pepper, chopped
1 Tbsp Dijon mustard
1 Tbsp Worcestershire
3 Tbsp ketchup
5 Tbsp Steak sauce (A-1 sauce)
1 egg
Salt and pepper


Mix all ingredients!. Spray a casserole dish with cooking spray!. Take mixture and form into a "loaf" shape in the center of the pan!. Bake at 350 for about an hour and fifteen minutes!.

Italian Meatloaf

2lb!. ground beef
1lb!. ground pork
mix them together with a chopped onion and a few cloves of minced garlic, about a cup of bread crumbs, a sprinkle of oregano and basil and add a half a jar of you favourite spaghetti sauce!. Bake at 350 for about 30 minutes or so then pour the rest of the spaghetti sauce over the meatloaf and sprinkle the top with mozzarella cheese and bake until it is cooked though ( you can tell because it has a firm feel and is no longer pink in the center!.)

This is great with pasta or garlic mashed potatos!

2 pounds hamburger meat
1 box stove top stuffing (any kind but cornbread)
ketchup

Mix in large bowl the hamburger and stove top!. Form into loaf!. bake at 350* for about an hour (til its almost done)
