How do I make chili using Chicken?!


Question: How do I make chili using Chicken!?
I've never tried chili before, I don't eat beef but would like to try chili!. Does anyone know a great recipe using chicken!?Www@FoodAQ@Com

MEXICAN CHICKEN CHILI

1/2 lb!. ground chicken
1/3 cup chopped onion
1/3 cup chopped green pepper
1 - 14 oz!. can chopped tomatoes
1 - 14 oz!. can red kidney beans
1 - can chopped mushrooms
1 - small can tomatoe paste
1/8 tsp!. pepper, oregano, cayenne

Brown ground chicken in a non-stick frying pan until no longer pink!. Add onion and pepper and continue cooking for 2 minutes!. Transfer to a large pot and add remaining ingredients!. Simmer for 20 minutes!.

Serve with toast or dinner rolls!.

Can also be cooked in a slow cooker

WHITE LIGHTNING CHICKEN CHILI

4 boneless skinless chicken breasts, cubed
2 cans great northern beans, rinsed
1 whole white onion, diced
1 cup frozen white corn
1 yellow bell pepper, diced
1 ? cups fresh mushrooms, sliced
1 bulb fresh garlic, minced
6 habanera peppers
? cup white wine
1 can chicken broth
2 tsp!. cumin powder
1 tsp!. coriander powder
1 tbsp!. ground white pepper
3 tbsp!. olive oil
1 lime, squeezed for juice
? cup sour cream
? cup shredded pepper jack cheese

Heat olive oil in large sauté pan to medium-high heat, and add garlic, onions, and chicken!. Sauté for 10-15 minutes or until chicken is no longer pink!.

In a large Dutch oven add chicken broth, cumin, coriander, ground white pepper, lime juice, habanera peppers (if mild chili is preferred, use fewer hot peppers, as desired - the quantity given is very hot!), and bring to a boil!. Reduce heat to medium, cover with lid, and let simmer for 10-15 minutes!. Add the chicken, garlic, and onion mixture, plus the corn, beans, yellow bell pepper, mushrooms, and white wine!.

Cover and let simmer for approximately 30-35 minutes!.

When finished, remove from heat and stir in the sour cream!. Garnish with the shredded pepper jack cheese, and serve with crusty garlic bread!.

White Chili
Serves 4-6
2 15-oz!. cans Bush's Great Northern White Beans
1 1/2-lbs Boneless, Skinless Chicken Breasts
1 Tbsp!. Olive Oil
1 Medium Onion, chopped
2 Garlic Cloves, minced
1 4!.5-oz!. can Chopped Green Chilies
1 tsp!. Ground Cumin
1 tsp!. Dried Oregano, crumbled
Pinch Cayenne Pepper
2 14-oz!. cans Chicken Broth
1 8-oz!. pkg!. finely shredded Cheddar Cheese
Sour Cream

Place chicken in large heavy saucepan!. Add cold water to cover
and bring to simmer!. Cook until just tender, about 15 minutes!. Drain and cool!. Remove skin and cut chicken into cubes!.


Heat oil in same pot over medium-high heat!. Add onions and sauté until translucent, about 10 minutes!. Stir in garlic, then chilies, cumin, oregano and cayenne and sauté 2 minutes!. Add undrained beans and stock and bring to boil!. Reduce heat and add chicken and cheese to chili and stir until cheese melts!. Season to taste with salt and pepper!. Ladle chili into bowls and garnish with sour cream (or stir sour cream into chili to thicken!.) Serve with tortilla chips!.Www@FoodAQ@Com

OUTLAW CHILLY

1 lg!. bell pepper
1 lg!. onion
3 lb!. ground chicken
2 cans tomatoes (16 oz!. cans)
1 can tomato sauce (16 oz!. can)
1 pkg!. mild chilly powder
2 cans chile beans (16 oz!. cans)
16 oz!. Cheddar cheese, shredded

Chop up bell pepper and onion!. Saute until brown!. Put in ground chicken and cook on medium heat until brown!. Add tomatoes, tomato sauce, chile powder and chile beans!. Place heat on low or simmer and cook for 1 hour!. Put shredded cheese over chilly when serving!.

1-1/2 lb!. ground chicken
1 large onion, finely chopped
2 jalape?o peppers, cut into 1/8-inch-thick slices
3 Tbsp!. chili powder
1 can (14!.5 oz!.) fat-free reduced-sodium beef broth
2 cans (15 oz!. each) kidney beans, drained, rinsed
1 can (28 oz!.) tomato puree
2 Tbsp!. Worcestershire sauce
2 Tbsp!. soy sauce
1/2 tsp!. ground black pepper
1/4 cup finely chopped fresh cilantro
2 pkg!. (16 oz!.) KRAFT Shredded Sharp Cheddar Cheese

BROWN meat in Dutch oven or large deep skillet on medium heat; drain, if necessary!. Add onions and jalapeno peppers; cook 5 to 7 min!. or until tender, stirring frequently!.
ADD all remaining ingredients except cilantro and cheese; stir!. Reduce heat to low; cover!. Simmer 1 hour, stirring occasionally!.

just use the same amount of shredded or diced chicken breast instead of beef, or i guess you could get the ground chicken too!. but i would just use shredded chicken breast for the texture!. good luck! chicken chili is delish!Www@FoodAQ@Com
