When is a potato no longer usable?!

Question: When is a potato no longer usable!?
Answers:
When it starts growing sprouts ("eyes" as some call them) , you should try to use them up because as the sprouts grow, mild toxins build up in the potato!. The toxins won't kill you, but
some people will be more sensitive to the toxic by-products of the growths!.

I know this goes against what my own mother did (keep the potatoes in the basement in a cool, dark place): she kept them until they were covered with sprouts and thought they were still "good"!.Www@FoodAQ@Com
