I have two bunches of asparagus that I would like to prepare for dinner!. What is a tasty, but simple way to prepare the asparagus without using lemon or lime juice!?Www@FoodAQ@Com

Simply Steamed Asparagus

INGREDIENTS:
1 bunch asparagus spears
1 teaspoon butter 1/4 teaspoon salt
3 cups water

DIRECTIONS:
1!. Place water in the bottom half of a steamer pan set!. Add salt and butter, and bring to a boil!.
2!. Trim the dry ends off of the asparagus!. If the spears are thick, peel them lightly with a vegetable peeler!. Place them in the top half of the steamer pan set!. Steam for 5 to 10 minutes depending on the thickness of the asparagus, or until asparagus is tender


Fried Asparagus

INGREDIENTS:
1 bunch fresh asparagus,
trimmed and cut into 1 inch
pieces
1/2 cup canola oil for frying 1 egg
1 cup coarsely crushed buttery
round crackers

DIRECTIONS:
1!. Bring about 2 inches of water to boil in a saucepan!. Add the asparagus, and cook for about 3 minutes!. Drain, and pat dry!.
2!. Heat enough oil to cover the bottom of a large heavy skillet over medium to medium-high heat!. Whisk the egg in a small bowl, and place the cracker crumbs in a separate bowl!.
3!. Dip the asparagus pieces into the egg, and then coat with cracker crumbs!. Fry in the hot oil until golden!. Turn frequently for even cooking!. If they are browning too quickly, reduce the heat a little!. Drain on a paper towel-lined plate before serving


Asparagus Casserole

INGREDIENTS:
2 (8 ounce) packages whipped
cream cheese
1 (11 ounce) can condensed
cheese soup
2 (4 ounce) cans shrimp, drained
3 (15 ounce) cans asparagus,
drained
1 (6 ounce) can French-fried
onions

DIRECTIONS:
1!. Preheat oven to 400 degrees F (200 degrees C)!.
2!. In a mixing bowl, blend cream cheese and cheddar cheese soup until there are no lumps!. Fold in the shrimp!.
3!. Arrange the asparagus in a 9x13 inch casserole dish!. They should be arranged so that the head to tail end of the asparagus are alternated!. Pour the cheese and shrimp mixture over the asparagus!. Use a spatula to spread the soup around evenly!. Be careful not to tear asparagus!. Make sure there is at least 1/2 an inch of space between the top of the ingredients and the top of casserole dish because the casserole will boil while cooking!.
4!. Bake covered in a preheated 400 degrees F (200 degrees C) oven for 35 minutes!. After 35 minutes, uncover and crush fried onions on top of casserole and cook for the remaining 10 minutes uncovered!.

Sauteed Garlic Asparagus

INGREDIENTS:
3 tablespoons butter or
margarine 1 bunch fresh asparagus
3 cloves garlic, chopped

DIRECTIONS:
1!. Melt the butter or margarine in a large skillet over medium-high heat!. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender!. If you like your asparagus well done, reduce heat and cook an additional 10 minutes!.

Easy Asparagus

INGREDIENTS:
1 tablespoon olive oil
1/4 cup sliced purple onion
1 clove garlic, chopped
salt and pepper to taste
lemon pepper to taste 10 spears fresh asparagus
2 tablespoons white wine
1 tablespoon Parmesan
cheese
1 tablespoon crushed whole
wheat crackers

DIRECTIONS:
1!. Heat the olive oil in a skillet over medium-high heat!. Mix in onion and garlic, and season with salt, pepper, and lemon pepper!. Cook and stir until tender!. Place asparagus in the skillet, and cook 8 minutes, turning occasionally to coat with seasonings!. Sprinkle wine into the skillet, and scrape up any browned bits!.
2!. Transfer asparagus to a shallow dish!. Drizzle with remaining mixture in skillet, and dust evenly with Parmesan cheese and crushed whole wheat crackers!.


Raspberry Asparagus

INGREDIENTS:
1 pound fresh asparagus
spears, trimmed
1 (8 ounce) container low-fat raspberry yogurt
1/2 lemon, juiced

DIRECTIONS:
1!. Place the asparagus in a steamer basket, and set over about 1 inch of boiling water!. Cover, and steam for 5 to 8 minutes, or until tender and bright green!.
2!. In a small saucepan, stir together the yogurt and lemon juice!. Cook over medium heat until warmed!.
3!. Place steamed asparagus onto serving plates, and spoon the sauce over, or serve sauce separately!.Www@FoodAQ@Com

classic combinations with asparagus are parma ham (prosciutto) just wrap around the outside and roast in the oven
its also nice with some grated Parmesan over the top after cooking
or serve with a poached egg and holandaise sauce
asparagus is suitable to be roasted grilled boiled or steamed
just make sure its cooked by testing with a knife

remember to snap at the bottom of the asparagus it should snap in the right place easily the lower part about an inch high on unprepared asparagus is quite woody and fibrousWww@FoodAQ@Com

toss in boiling water until the stalk can let a fork show me it is tender
I like dipping in mayo or butter sauce as a snack
I do a cheese sauce as a side for dinner!.!.
BUT
they are now SO expensive I pass them by
I know it does NO good to do without

Asparagus is so tasty by itself that it doesn't need much more than a little butter and a sprinkling of butter!. Get a little fancy by sprinkling before serving with some crushed croutons!.Www@FoodAQ@Com

I LOVE to use butter, salt, pepper, and a little garlic ( fresh or powder) and the family loves it too!! you can grill it or you can steam it on the stove, or boil it any way it is tasty!!1Www@FoodAQ@Com

I snap mine and wash them!. I place them in a skillet and add some no-calorie butter spray and sprinkle them with garlic and let them simmer for about 7-10 minutes!.Www@FoodAQ@Com
