Watermelon recipe?!
We bought a watermelon for a grill out we had, and no one ate any!. So now I have 10 lbs of watermelon, I'm just wondering if anyone has any other serving suggestions so we're not just eating 10 lbs of watermelon!

Dilled Baby Shrimp & Watermelon Napoleons
2 cups cooked baby salad shrimp
2/3 cup mayonnaise
1 tablespoon fresh snipped dill
12 4-inch seeded rounds of watermelon about 1/2 inch thick
4 large cocktail shrimp
4 sprigs of dill
Mix together the shrimp, mayonnaise and dill!. Chill until ready to serve!. To serve, place a round of the watermelon on a serving plate and top with a thin layer of the shrimp salad!. Top that with another round of the watermelon and then another layer of the shrimp salad!. Top that with another watermelon round!. Place a cocktail shrimp on top with a sprig of dill!. Repeat to create 4 "Napoleons"!.

INGREDIENTS:
2 cups 1/4-inch-diced
watermelon
2 cups orange juice
2 tablespoons extra-virgin olive
oil
1 seedless cucumber, cut into
1/4-inch dice
1 small yellow bell pepper,
seeded and cut into 1/4-inch
dice 1 small onion, cut into 1/4-inch
dice
2 medium garlic cloves, minced
1 small jalapeno pepper,
seeded and minced (optional)
3 tablespoons fresh lime juice
2 tablespoons chopped fresh
parsley, basil or cilantro
Salt and freshly ground black
pepper
DIRECTIONS:
1!. Process 1/2 cup of watermelon, along with the orange juice and oil, in a blender or food processor until pureed!. Transfer to a medium bowl, along with remaining ingredients!. Season with salt and pepper to taste!. Refrigerate until ready to serve!. (Can be made several hours before serving!.)
Watermelon Salsa
INGREDIENTS:
2 cups seeded and coarsely
chopped watermelon
2 tablespoons chopped onion
3 tablespoons seeded, chopped Anaheim chile
2 tablespoons balsamic vinegar
1/4 teaspoon garlic salt
DIRECTIONS:
1!. In a serving bowl, mix together the watermelon, onion, and chile pepper!. Season with balsamic vinegar and garlic salt!. Cover and refrigerate for at least one hour to blend flavors!.
Rockin' Baby Back Ribs Sauce
INGREDIENTS:
6 pounds seedless watermelon
1 (6 ounce) can tomato paste
1 tablespoon onion powder
1 tablespoon garlic powder
2 cups firmly packed brown sugar
1/2 cup dry sherry
2 teaspoons lemon juice
1 teaspoon liquid smoke
flavoring
DIRECTIONS:
1!. Cut the melon flesh into chunks, and discard the rind!. Place the chunks in a large saucepan over medium heat for 2 to 3 hours, stirring occasionally, or until the melon is the consistency of applesauce!.
2!. Stir in the tomato paste, onion powder, garlic powder, brown sugar, sherry, lemon juice, and liquid smoke!. Reduce heat to low, and simmer uncovered for 2 hours!. Allow mixture to cool to room temperature

INGREDIENTS:
1/4 cup olive oil
2 tablespoons fresh mint
leaves julienned (finely sliced)
4 teaspoons champagne
vinegar
1/2 small chilled watermelon,
preferably seedless
3/4 cup red seedless grapes, halved
3/4 cup green seedless grapes,
halved
1 cup crumbled California feta
cheese
1/4 cup pine nuts, toasted
Mint sprig, for garnish
DIRECTIONS:
1!. In large bowl whisk together oil, mint leaves and vinegar; set aside!.
2!. With a sharp knife cut around edge of watermelon to within 1/2 inch of rind!. Then cut a deep cross through the flesh, leaving rind intact and reserving for later use!. Scoop out each quadrant of watermelon and cut flesh into 3/4-inch cubes!.
3!. Place in bowl with vinaigrette, watermelon flesh, grapes and feta; toss gently!. Use watermelon shell for serving and if necessary, slice off a sliver of its bottom so it sits level!. Makes a ton!!! Very refreshing for a summer party!
1 small seedless watermelon
1 package small grape or cherry tomatoes
1 bunch of basil or baby basil leaves
4 tbsp!. balsamic vinegar
1 tbsp!. olive oil
salt, to sprinkle
toothpicks
Cut top and bottom off the watermelon to level it!. Sit it upright and cut away the rind!. Cut into 1 inch cubes, reserve!.
Cut the tomatoes in halves, and place each half on the watermelon cubes with the flat side of the tomato facing up!. Poke a toothpick through the tomato and watermelon to secure!.
Arrange toothpicked bites on a serving tray!. Sprinkle with salt!.
Mix vinegar and olive oil together!. Drizzle over tomato/watermelon cubes!. Place a small basil leaf on skewer!.
Keep refrigerated until ready to serve!.Www@FoodAQ@Com
