Vodka Shrimp with Linguine pasta
(Serves 2)

1 clove/1 tablespoon chopped garlic
1 tablespoon chopped onion
1 dozen medium-sized raw shrimp, de-viened!.
Salt & Pepper to taste
30ml vodka
8 ounces boiled linguine pasta (or any other pasta)
Olive oil

Firstly, heat the olive oil in a pan on medium-high heat, add chopped garlic and onion and stir for few minutes till fragrant and slightly golden brown!. Add raw shrimp and allow shrimp to cook till shell turns pink and meat is opaque (approximately 3 minutes on each side)!. When shrimp is almost cooked, add vodka and allow another minute or two for the alcohol to evaporate!. Once done, turn off the heat and toss in pasta!. Serve immediately and top with chopped parsley if desired!.Www@FoodAQ@Com

Citrus marinated shrimp cocktail

Do not fully cook the shrimp;
just barely cook them till they start to turn pink!.
also, do not over-marinate, or they will get tough!.

Ingredients
1 cup orange juice
1 cup fresh lemon juice
3/4 cup ketchup
1/3 cup vodka
1/4 teaspoon hot pepper sauce
1/4 cup olive oil
1 1/2 pounds cooked peeled large shrimp
1 small red onion, thinly sliced (about 1 3/4 cups)
1 cup finely chopped fresh cilantro

Preparation:
Combine juices, ketchup, vodka and hot pepper sauce
in large bowl!.
Whisk in oil!.
Add shrimp, onion and cilantro and mix well!.
Cover and refrigerate at least 3 hours and up to 6 hours!. Drain before serving!.

Penne Pasta with Tomato Vodka Sauce

1 pound Penne pasta
1/4 cup olive oil
1 large onion, chopped
4 cloves garlic, minced
2 15-oz!. cans crushed tomatoes
1/2 pound Canadian bacon or smoked ham, diced
1/2 tsp!. crushed red pepper
2 cups frozen peas
1 cup heavy cream or half and half
1/2 cup vodka
1/2 cup Romano cheese, grated

Saute onion and garlic in olive oil until just golden brown!. Add tomatoes, Canadian bacon, crushed red pepper and peas and cook for about 5 minutes!. Add cream and vodka and cook an additional 5 minutes!. Meanwhile boil pasta until cooked al dente and drain!. Serve sauce over pasta and sprinkle with Romano cheese!.Www@FoodAQ@Com

Chocolate Mocha Liqueur Cake

1 (18!.25 ounce) package yellow cake mix
1 (3!.9 ounce) package instant chocolate pudding mix
1 cup vegetable oil
3/4 cup water
3 eggs
1/4 cup coffee flavored liqueur
1/4 cup vodka
1 cup white sugar
1/2 cup butter
1/4 cup hot water
2 tablespoons coffee flavored liqueur
2 tablespoons vodka

Preheat oven to 350 degrees F (175 degrees C)!. Grease and flour a 10 inch Bundt pan!.
In a large bowl, combine the cake mix, pudding mix, oil, 3/4 cup water, eggs, 1/4 cup coffee liqueur and 1/4 cup Vodka!. Mix well, then pour into greased and floured Bundt pan!.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean!. Pour glaze over hot cake while still in pan!. Let cake sit for 30 minutes!.
To make the glaze: in a small saucepan combine sugar, butter and 1/4 cup hot water!. Bring to a boil and cook for 1 minute!. remove from heat and stir in 2 tablespoons coffee liqueur and 2 tablespoons vodka!.

Vodka Sauce
Tastes delicious over any pasta! I especially love it with lobster ravioli

1/2 cup butter
1 onion, diced
1 cup vodka
2 (28 ounce) cans crushed tomatoes
1 pint heavy cream

In a skillet over medium heat, saute onion in butter until slightly brown and soft!. Pour in vodka and let cook for 10 minutes!. Mix in crushed tomatoes and cook for 30 minutes!. Pour in heavy cream and cook for another 30 minutes!.

Vodka Smoothie

6 fluid ounces vodka
18 fluid ounces orange juice
1 cup frozen strawberries
4 scoops orange sherbet
1 cup crushed ice

In a blender, mix the vodka, orange juice, strawberries, orange sherbet, and ice!. Blend until smooth!.
Serves 4!.

Penne ala Vodka!. It is an amazing dish!. The recipe I use it:

1 can of crushed tomatoes
cook and season to liking!. cook for about 45 minutes!. after the 45 minutes add 1/4 cup of vodka, 1 1/4 cups of heavy creamy, 10 tbsp of perino romano or parmesan cheese and proscuito chopped small!. cook for another 15 minutes!. Boil 1lb of penne!.Www@FoodAQ@Com

Vodka Tomatoes
You could serve them as an appetizer!. Sprinkle a little parsley over them before serving

24 cherry tomatoes, cut a cross on the base of the tomato
6 cloves garlic, peeled,finely chopped
1/2 cup vodka, enough to cover half way up the tomato (approx)
sea salt
chopped fresh parsley (to garnish)

After you have cut a small cross in the bottom of each tomato place them side by side, cut side down, in a shallow dish salt the tomatoes, just a little!. Sprinkle the garlic over the tomatoes!. Pour in enough vodka so it is well above the cut crosses!. The longer you leave them the more Vodka they will absorb but leave them at least 24 hours at room temperature, then you can refrigerate them!. Serve with salt!.

Vodka Rigatoni

1/4 pound chopped prosciutto
2 cups heavy cream
1 (28 ounce) can crushed tomatoes
1 fluid ounce vodka
1 (7 ounce) jar roasted red peppers
2 tablespoons chopped fresh parsley
2 teaspoons garlic powder
1 1/2 teaspoons white sugar
1 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon crushed red pepper flakes (optional)
1 cup grated Parmesan cheese
1 pound rigatoni pasta
1/4 cup green peas

Drain roasted peppers, reserving a small amount of the liquid!. Cut peppers into strips!. Combine prosciutto, cream, crushed tomatoes, vodka, roasted peppers with reserved liquid, parsley, garlic powder, sugar, salt and black pepper, and crushed red pepper in a saucepan!. Cover!. Cook over medium heat, stirring often, until the sauce comes to a boil!. Reduce heat, and simmer for 30 minutes!.

Meanwhile, cook pasta according to package directions!. Drain, and transfer to a large serving bowl!. Stir cheese into the sauce!. Stir sauce into rigatoni ,and top with peas!.

Chicken Vodka Lasagna
Ingredients

2 boneless, skinless chicken breasts
1/2 large onion, rough chop
1 Tbsp garlic
1 Tbsp basil (dried)
some parsley
s&p
several cups of water

1/2 large onion
1 poblano pepper
1 Tbsp garlic, minced
2 tsp red pepper
1 tsp basil
2 tsp parsley
s&p
8 oz!. sliced mushrooms
1 jar Emeril's Vodka Sauce

3 cups cottage cheese
1 egg
fresh chopped parsley

7 or 8 cooked lasagna noodles
3 cups mozzarella cheese



Directions
Put the first 7 ingredients in a large stock pot and bring to a boil!. Turn heat to low and cover!. Simmer about 25 minutes until chicken is cooked through and tender!. Drain water (and save the broth) and chop or shred the chicken!. Set aside!.
In a large heated pot, spray pam and add onions, peppers, garlic, and spices!. Sautee until transparent!. Add mushrooms, and continue sautee until mushrooms are cooked to your liking!. Add vodka sauce and chopped chicken, and simmer about 10-15 minutes!.
In a small bowl, combine cottage cheese, parsley, and egg with a wisk until mixed well!.
Now for assembly!.!.!.!.!.!.
spray a 9X11 casserole dish!. Place 3 or 4 noodles on bottom!. Spread 1/2 of your cottage cheese mixture evenly across top of noodles!. Ladle in 1/2 of your sauce mixture on top of cheese!. Sprinkle 1 1/2 cups mozzarella cheese on top!. Repeat!.
Bake at 350 degrees until cheese is bubbly, about 20-30 minutes!.
