Burnin' the breading ... can you help?!
Whenever I pan-fry something I've coated in bread crumbs or corn meal, it comes out a wonderful golden brown at first, but by the time I get to the second and third batches, the left-behind crumbs are black, which makes the food taste and look burnt!.
Does anyone know what I can do to prevent this short of changing the oil between each batch!?

Sounds like your second and third batches are picking up overly crisped bits left behind from previous batches!. You can help by:
1!. Making sure that you have enough oil in the pan
2!. You are keeping an even temperature in your pan and not leaving the pan on the burner during the time you are breading the other batches!. This will heat the oil too much!.
3!. Try blending your oil with some butter for added flavor!.
4!. If you have a lot of frying to do, clean your pan between batches!. Or, scoop out the remaining bits between frying!.Www@FoodAQ@Com

Be sure to let whatever you are coating let sit for a few minutes before you pan fry-it and shake off any extra coating!. also if you do not let the oil sit empty between batches it won't have as much time to burn what crumbs get into it!. Many cooks start by pan frying to get the food golden brown then finish it in the oven!.
You can switch pans and filter the oil to get the crumbs out with a metal strainer!.

As you cook your pan gets hotter, turn the heat down a touch after the first batch and use a tea strainer <the cup kind with the screen> to sift out the left over crumbs!. It also helps to shake off the excess breading before putting it in the oil!. Happy eating!Www@FoodAQ@Com
right, reduce heat, but also remember to add more oil in between rounds!. the dry batter will soak it up and leave those little crumbs to just sit and sizzle!. using olive oil may help too, as it tends not to burn so easily!.Www@FoodAQ@Com
after you start the first turn down your flame!. once you've reached your temp turn down you heat to medium to maintain your heat but not burn your food!.Www@FoodAQ@Com
