I need help making a crustless quiche/fritata using potatoes on the bottom?!


Question: I need help making a crustless quiche/fritata using potatoes on the bottom!?
My mom made some type of crustless quiche once!. I remember she lined the pan with sliced potatoes that had been sauteed in a little bacon grease!. The bacon crumbles went into the egg batter with the rest of the veggies and was poured over the top!. Does this sound good to anyone else!? Do you think it would work!? I dont' have an exact recipe if you want to post something similar for me to get inspiration from!. :) Thanks!Www@FoodAQ@Com

Oh yeah! That will be tasty!. Do this in an oven safe pan so that you can get the top to "set" in the oven!. Cook the potatoes all the way before adding any topping!. Save some of those bacon crumbles to sprinkle on the top too!. Some cheese might be nice on top too depending on what you use inside!.

For veggies, try spinach and tomato; or just onion; or onion and asparagus tips; or zucchini slices!. Your imagination is the only limit on this one!.Www@FoodAQ@Com

You could replace the ham with bacon if you like!.!.!.but here is a recipe with the same idea as yours!.


Sun Dried Tomato Quiche

FOR THE CRUST:
1 large baking potato - thinly sliced
2 Tablespoons butter - melted


FOR THE FILLING:
3/4 cup whipping cream
3/4 cup shredded provolone cheese
5 large eggs
2/3 cup sun dried tomatoes in olive oil - chopped
1/3 cup cubed smoked ham
1 medium green onion - chopped
2 teaspoons fresh basil - finely chopped
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon pepper
Preheat oven to 350 degrees!.

Butter the pie plate and arrange potato slices on bottom of pie plate to form a crust!. Brush melted butter on top of potatoes!. Prebake in oven for 10 minutes!. Remove from oven!.

In a medium bowl, whisk the eggs with the cream, oregano, garlic powder, onion powder and salt and pepper!.

Place tomatoes and ham on top of potatoes!. Sprinkle evenly with basil, onion and cheese!. Pour egg mixture over ingredients in the pan!.

Bake for 40 to 50 minutes until knife inserted in the center comes out clean!. Let stand a few minutes!. Slice into wedges and serve!.Www@FoodAQ@Com

BACON & SOUR CREAM QUICHE:
Melt 1/2 cup of butter on medium heat, remove & add:
1 cup all-purpose flour, 1/2 cup frozen hash browns,
1/2 cup grated cheddar, 1/2 tsp Worcestershire sauce,
1/2 tsp salt, 1/4 tsp onion powder!.
Press firmly into bottom of 9" pie plate!.
Fry until crisp, 8 slices of bacon diced!.
Transfer to paper towels to drain fat, scatter over crust!.
Sprinkle 1 cup grated Swiss cheese over bacon, &
1/3 cup finely chopped onion!.
Beat 3 large eggs with 1 1/2 cups sour cream,
add 1 tbsp flour, 1/2 tsp salt, 1/8 tsp pepper!.
Pour over cheese, Onioin, & bacon, in shell!.
Bake on bottom rack in 375F oven about 40 minutes!.
Test for clean knife in centre when done!.Www@FoodAQ@Com

Yes just make sure your potatoes are cooked beforehand because you don't want raw potatoes in your quiche!.Www@FoodAQ@Com
