The key to a fluffy omelet is to add heavy cream or canned milk or milk!. I like my omelet rich so I use heavy cream!.
in a skillet melt 1 tbsp of butter
add garlic, green onions, bell pepper, mushroom(or what you like)+salt &pepper
mix eggs & cream & salt & pepper to taste
stir in skillet with veggies
I like to garnish (when plated)with sour cream, avacado, salsa and cheese optional-bacon piecesWww@FoodAQ@Com

The way I make my eggs fluffy is to add a little milk (like a tablespoon) for 2 eggs and beat them with a fork until they are frothy!. Then, I pour them into a hot greased pan (medium heat)!. Let them cook for a minute or so covered with a lid, and drop the heat back to medium-low!. The bottom should be cooked but not burny looking and the top should be cooking!. Put whatever goodies you want onto half of the egg (which should be in a layer on the whole bottom of the pan)!. I like cheese, bellpeppers, mushrooms, tomatoes, and spinach!. Cut your veggies in little pieces! Then, use a spatula (I put cooking spray on it so it won't stick) and gently fold the omlette in half!. Cover it back up for about 30-45 seconds to let the cheese melt, and voila! Delicious omletteWww@FoodAQ@Com
