To be honest, I usually just go to the store and buy the biscuits in a can that you can pop into the oven ;)!.

You can, however, do the following to make "pretend" buttermilk that works just as well: Add 1 T of lemon juice to 1 c of milk!. I've tried it with the following recipe:

Ingredients
2 cup(s) flour, all-purpose
2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoon sugar
2/3 cup(s) buttermilk, 1% fat (or 2/3 c milk, 1 T lemon juice)
3 1/3 tablespoon oil, vegetable

Preparation
1!. Preheat oven to 450 degrees F!.

2!. In medium bowl, combine flour, baking powder, baking soda, salt, and sugar!.

3!. In small bowl, stir together buttermilk and all of the oil!. Pour over flour mixture and stir until well mixed!.

4!. On lightly floured surface, knead dough gently for 10 to 12 strokes!. Roll or pat dough to 3/4-inch thickness!. Cut with 2-inch biscuit or cookie cutter, dipping cutter in flour between cuts!. Transfer biscuits to an ungreased baking sheet!.

5!. Bake for 12 minutes or until golden brown!. Serve warm!.

You really do need shortening of some kind or they will be hard!. But!.!.!.I have made them with butter or margarine and they were just just fine!. Just cut it into the flour like you would the shortening using "cold" butter or margarine!. As far as the buttermilk goes, just add a teaspoonful of vinegar to the required amount of milk!. You'll never taste the vinegar!.Www@FoodAQ@Com

2 Cups of Flour (Spelt or Regular)
2 Teaspoons of Baking Powder
4 Tablespoons of Butter
Pinch of Salt
3/4 Cup of Milk (Butter Milk or Regular Milk)

Sift flour, baking powder and salt!.
Cut in butter
Add milk a little at a time, mixing until it becomes dough
Sprinkle a little flour on board (a board large enough to roll biscuit dough on)
Knead the dough
Roll dough 1/2 inch
Cut with biscuit cutter (I use a round jar top as a substitute) and place on cookie sheet
Preheat oven 400 degrees and bake for 10-15 minutes or until brown

Edit: I make these a lot - they are easy and delish!.Www@FoodAQ@Com

All I use when I make baking powder biscuits
is Baking Powder, Cornstarch, Flour, water
sometimes egg too but that's not necessary!
Write Chateline Magazine for good recipes!.!. Ask for biscuit recipes as that's what you want! I will be putting biscuit recipe amongst my recipes on my blog!
