Question: Any good salad receipt with red kidney beans!?
I have canned red kidney beans, onion, tomato, carrot, cucumber and lettuce!.!.!. looking for good suggestion for a simple and easy salad !.!.Www@FoodAQ@Com

These sound like perfect ingredients for a salad!. Just chop (or tear) the lettuce, add a couple of chopped (or sliced) cucumbers, a couple of carrots (chopped or sliced), some chopped tomato and about half an onion depending on your taste!. Toss in the kidney beans (drained and rinsed)!.

I recommend a light balsamic vinaigrette with this salad:

1/4 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup extra-virgin olive oil

Remember, you can always add more or less of any ingredient in a salad!. The goal is not to have too much of any one vegetable!. You can also add other vegetables or fruits (ie!. mushrooms, olives, sliced pears, etc!.)

BROCCOLI SALAD
1 head Broccoli flowerets
3/4 cup shredded Cheddar Cheese
3/4 cup Kidney Beans, drained
1/2 basket Cherry Tomatoes
1 small Onion, thinly sliced
3/4 cup Fresh Mushrooms, sliced
1 package dry Italian Salad Dressing

Mix dressing per package instructions!.
Put all ingredients together in a bowl and marinate 4 hours or overnight

MACARONI MEDLEY SALAD
3/4 cup Buttermilk
3/4 cup Fat-free Mayonnaise
2 tbsp fresh Dill, chopped -- or 1 tsp dried
4 cups Rotini Pasta - cooked and cooled
15 ounces canned Kidney Beans -- drained and rinsed
10 ounces frozen Green Beans, cooked -- drained and cooled
8 ounces fat-free Cheddar Cheese -- Healthy Choice, cube
Mix together buttermilk, mayonnaise and dill!.
Pour over combined pasta, beans and cheese; mix lightly!.
