Porking my birds cavity?!
im thinking of a poultry dish where i stuff the bird with pork(or bacon), stuffing and some kind of cheese!.
any ideas most welcome

I usually just take stuffing mix and add bacon, also use chicken broth; it tastes better!.
Bacon and Mushroom Stuffing --
INGREDIENTS
1 pound bacon
1/2 cup butter
1 onion, sliced thin
2 cloves garlic, minced
1 (4 ounce) package fresh mushrooms, sliced
1 cup white wine
2 cups chicken stock
1 (14 ounce) package seasoned stuffing cubes
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Place bacon in a large, deep skillet; cook over medium-high heat until evenly brown!. Remove bacon to a paper towel-lined plate to drain!. Reserve drippings in the skillet!.
Add the butter to the bacon drippings and melt over medium-high heat!. Cook the onion, garlic, and mushrooms in the butter and drippings until the onion has caramelized, 10 to 15 minutes!. Pour the wine into the skillet; allow the wine to warm; remove from heat!.
Place the stuffing cubes in a large bowl!. Pour the vegetable mixture over the cubes!. Add the chicken stock!. Transfer the stuffing to a 9x13 inch baking dish!. Or stuff in chicken or turkey!.

2 c!. cubed bread, lightly toasted
1/2 c!. chopped onion
1/2 c!. cubed Canadian bacon

1 tsp!. pepper
1 tsp!. poultry seasoning
1/2 c!. hot giblet stock or boiling water
Combine all the ingredients, mixing them lightly!. Loosely fill the cavity of a turkey, chicken, or rock Cornish hen!. The stuffing can also be baked in a 1 1/2 quart casserole in a preheated 350 degree oven for 45 minutes!.

I usually make my grandmas basic stuffing!. I don't know a lot of exacrt measurements as she never used them either but here we go:
About 6-8 slices of bread!. sour dough would be great but what ever you jave on hand is just fine!.
chopped onion
sliced celery
melted butter
milk
sage
salt
pepper
Mix the bread, onion, and celery!. Sprinkle on salt, pepper, and sage!. Drizzle with about 2-3 tbls of the melted butter, mix well and then slowly add the milk!. Becareful not to add to much!. You want it just moist but not soggy!.
Additions to the stuffing:
Add 3-4 pieces smoked bacon crumbled!. Use about 1/2 bacon fat and 1/2 butter!.
Corn
Dried cranberries
1-2 cloves garlic
chopped nuts
try peas also
chopped dried apricots

Make a chicken stuffing from bread, an egg, a little milk and chopped bacon!.
Stuff the chicken with that and spit roast it!.
Near the end, carefully lift the skin in places and insert small chunks of cheddar chees in it!.
Serve hot!. The cheese will melt under the loose skin on its own!.
