Blueberry Waffles with Fast Blueberry Sauce --


INGREDIENTS
3 egg yolks, beaten
1 2/3 cups milk
2 cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup melted butter
3 egg whites, stiffly beaten
2/3 cup blueberries

1 1/2 cups blueberries
3 tablespoons honey
1/2 cup orange juice
1 tablespoon cornstarch


DIRECTIONS
In a medium bowl, whisk together egg yolks and milk!. Stir in flour, baking powder and salt!. Stir in butter, and set mixture aside for about 30 minutes!.
Preheat a lightly greased waffle iron!.
Fold egg whites and 2/3 cup blueberries into the mixture!. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown!.
To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice!. Bring to a boil!. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture!. Stir constantly until thickened!. Serve warm over waffles!.

BLUEBERRY BREAD PUDDING:
Spread butter or margarine on 12 slices of French bread!.
Arrange slices, butter up, in single layer in greased 3 qt dish!.
Heat 3 cups half'n'half or whole milk on medium heat 8 mins,
until it starts to bubble around edges!.
Beat 5 lg eggs, 1/2 cup white sugar, 2 tbsp vanilla, until pale!.
Slowly add 1/2 cup of warm cream/milk, stirring constantly!.
When combined, pour evenly over bread slices!.
Place baking dish in large roasting pan,
carefully pour boiling water into pan, halfway up dish sides!.
Bake uncovered in 350F oven for 35 minutes until set!.
Remove carefully from roasting pan, let stand 15 minutes!.
BLUEBERRY SAUCE:
Combine 2 cups fresh/frozen blueberries,
1/4 cup blueberry jam, 3 tbsp orange liqueur (Grand Marnier),
2 tbsp sugar, 2 tbsp water, in medium fry-pan, stirring!.
Bring to boil over medium heat, for 5 minutes, until thickened!.
Spoon over each bread slice in baking dish!. Serves 12!.Www@FoodAQ@Com

Lemon Berry Smoothie:

Ingredients:
8 ounce container blueberry nonfat yogurt
1 1/2 cups skim milk
1 cup ice cubes
1 cup fresh blueberries
1 cup fresh strawberries
1 teaspoon powdered lemonade mix

Directions:
Place yogurt, milk, ice cubes, blueberries, strawberries, and lemonade mix in a blender!. Pulse until smooth and creamy!.

BLUEBERRY CREAM CHEESE DESSERT

CRUST:

1 cup chopped pecans
1/2 cup butter, melted
1 cup flour

FILLING:

8 ounces cream cheese, softened
1 cup powdered sugar
8 ounces Cool Whip

TOPPING:

4 cups blueberries, fresh or frozen
1 cup sugar, divided
3 tablespoons cornstarch
1/4 cup water

Combine crust ingredients; spread in a 9 x 13-inch pan and cook for 15 minutes at 350 F!. Cool!.
Cream together the cream cheese and powdered sugar!. Fold in Cool Whip!.

Spread over cooled crust!.

Combine 1/2 cup sugar and cornstarch in a saucepan!. Add water then 2 cups of the blueberries!. Cook over medium heat!. stirring constantly, until thickened and translucent!. Crush some of the blueberries as they cook!.

Remove from heat and add remaining sugar and blueberries!. Cool!. Spread over cream cheese filling and chill!.

Serving Size: 12


BLUEBERRY BANANA BREAD

1/2 c!. butter, softened
1 tsp!. vanilla
1 tsp!. baking soda
2 lg!. ripe bananas, mashed
1/2 c!. chopped nuts (optional)
1 c!. sugar
2 eggs
1 1/2 c!. flour
1/2 tsp!. salt
1 1/2 c!. blueberries, fresh or frozen

Preheat oven to 325°F degrees!.
Grease and flour 2 loaf pans!. Cream together butter and sugar!. Beat in eggs!. Add mashed bananas!.

Measure flour, reserving 2 tablespoons of flour to coat blueberries!.

Stir baking soda and salt into flour, mixing well!. Fold into banana mixture!. Stir in vanilla!.

Sprinkle the 2 tablespoons flour over blueberries, then fold into batter!. Stir in chopped nuts!.

Transfer batter to loaf pans!.

Bake about 50 minutes!.

BLUEBERRY CRISP

4 cups blueberries
1 cup unsifted flour
3/4 cup sugar
1/2 cup mayonnaise
1/2 teaspoon cinnamon

Place fruit in ungreased 8 x 8" baking pan*!. Stir together flour, sugar and cinnamon; blend in mayonnaise until mixture resembles coarse crumbs!. Sprinkle/spread over fruit!.
Bake 35-40 minutes at 350° or until browned!. *If using a glass-baking pan, reduce oven temperature to 325°!.

Keep blueberries at their freshest by storing them unwashed in the refrigerator!. Wash the berries just before you use them

BLUEBERRY BARS

3 cups blueberries (frozen or fresh)
3 cups flour
3 cups quick oats
1 cup safflower oil
2 cups maple sugar

Preheat oven to 350°F!.
Combine all ingredients together, mix well!. Pour batter into two 9x9 pans !.

Bake for 20-30 minutes!.

BLUEBERRY SYRUP

1/2 c!. sugar
1/4 c!. water
1/4 c!. light corn syrup
1 tbsp!. cornstarch
2 tsp!. lemon juice
2 c!. blueberries

Combine sugar and cornstarch in 1 quart casserole!. Add water, syrup, and lemon juice!. Stir in blueberries!.
Microwave on full power 4 1/2 to 5 minutes or until thickened!.

Microwave-tip: For a thicker sauce, add additional teaspoon of cornstarch!.

Blueberry & Custard Filled Star Puffs
Makes 6 Servings

1 sheet (from a 17 oz!. package) frozen puff pastry, thawed
1 package (3 3/8 oz!.) instant vanilla pudding and pie filling mix
1 cup milk
8 oz!. sour cream
2 cups fresh blueberries (1 pint)
1 T sugar
1/2 tsp!. grated orange zest
1 T chopped fresh mint (optional)
confectioner's sugar

Preheat oven to 400F!.

To prepare stars
Carefully unfold puff pastry on a work surface!. With a rolling pin, roll pastry out 1/2" wider than its original dimension!. Using a 3" star shaped cookie cutter, cut out 12 stars!. With a spatula place stars 1 inch apart on an ungreased baking sheet!. Bake until puffed and golden, about 15 minutes!. Transfer stars to a wire rack, cool slightly!. Using a sharp knife, cut stars in half, horizontally, cool completely!.

To prepare sauce
In a medium bowl place pudding mix and milk!. Using an electric mixer, beat until mixture is smooth, about 2 minutes!. Fold in sour cream!. Cover and refrigerate until thickened, about 15 minutes!.

In another medium bowl combine blueberries, sugar, mint and orange zest!. Cover and refrigerate until ready to serve!.

Using a small strainer sprinkle tops of stars with confectioner's sugar, set aside!. On each dessert plate place 2 star bottoms, spoon 1/3 cup sauce and 1/3 cup blueberries onto stars and top with reserved star tops!.Www@FoodAQ@Com

I think the best way to really enjoy fresh local berries is with a little heavy cream (35%) poured over them in a bowl with a sprinkle of sugar over top!. Another good one is a lemon tart with fresh blueberries on top!.

To me, it seems almost a shame to cook them!. I cook berries that are less than perfect or if I have tons of them, I'll cook them into a dessert (clafouti, crumble, pie, pancakes etc) or a jam, but not if I've only got a basket!.

Blueberry Cobbler

1 cup flour
1 cup sugar
1cup melted butter
1 1/4 cup milk

place melted butter in a 9x13 dish, combine flour, 1 c sugar, and milk, place on butter set aside

3 cup berries
1/2 cup more sugar
1/2 cup water

stew berries in water and sugar until they are sorta mushy, place ontop of the batter mixture

Bake cobbler in a 300 degree oven for 30 min until golden brown!! Enjoy

my mom always used frozen blueberries in her blueberry pancakes, so if you have some that you need to preserve before they go bad, just freeze em and plop them in pancake batter when you have a hankering for some blueberry pancakes!.Www@FoodAQ@Com
