Apart from the following, what are good meals to cook and freeze?!
I just got a freezer, haven't had one in years so I'm out of practice!

All of the above are fine - and you can freeze the mash int he cottage pie too ya know (I have a freezer full right now lol)
You can try soups, and stews!. But they're a bit boring to be honest!.
I cook: Chicken in sauce - jar sauces normally!. That freezes nicely, just stick it in the microbox while you boil up some rice or pasta to go with it!. Never freeze pasta that's been cooked it never keeps the right texture!.
Casseroles are good, grill the sausages, bung it in the oven with a sauce on it and then freeze that down!. Or chicken, or whichever you prefer!.
I do chicken parcels!. Wrap a breast in bacon, stuff it with some boursin and bake it in the oven in foil!. Yummy!. They freeze down too!.
You can always do things like freeze down roasted meats, and some mash, and then just re-heat them and steam some veg for a quick easy roast!.
You can make up spag bol mince mix and use it for lasagna, spag bol, or whatever!.
Make a cheese sauce - make a roux then add in some milk and grate cheese in, then freeze that down for macaroni cheese and stuff!. Try baking the macaroni sauce in the oven for ten minutes with some grated cheese and paprika on top it's lush!
Try just savoury mince - like cottage pie filling, but not baked in the oven!. Stick some whole new potatoes in it - yummy!.
The filling for fajitas - cook up the mince/chicken in the seasoning and freeze that down so that all you need to do is prepare the fresh stuff!. Or rather get him to lol!.
My current favourite is breading my own chicken for dippers or nuggets, they should freeze down too!. Just bread them, then fry them in oil and bung them in!. I have them with lemon sauce and fried rice!.

My ex wife made a few good freezer meals, but I had to throw her out after 3 months as she got kind of boring and tasteless!.
On a serious note though, 4 out of your 5 were mince based dishes, and I'm a little concerned about your cooking ability or affordability!.
My advice would be to menu plan, and buy things when they are cheap!. An example would be a joint of say, pork, which you could cook, carve and then freeze in portions, ready for defrosting a day in advance and reheating in gravy!.
Gammon is cheaper than ham to buy too, so you have your sandwiches covered!.
Fish is easy to cook, especially in the microwave in a little milk, and can be picked up cheaply in (UK anyway) supermarkets bargain fridges with close to sell by dates!.
Any vegetables, or leftovers not from plates could also be pureed and frozen, perhaps for your baby food, or for use as nutritional soups!.

Quiche, sausage rolls, pasties anything that has been cooked and is over freeze, when mine were young we always had a roast on a Sunday so I did extra everything and liquidized it , put into small containers then froze, after a couple of weeks you have a good mixture of different roasts already for the babs just defrost it the day before! also, chicken cacciatore is quick & easy and you can serve it over rice (minute rice works well) rather than pasta!.

Before I had my son, I always cooked up great bean dishes so all I had to do was make the rice, or bread!. I also made " packets" like chicken and vegetables in aluminum foil, that way you could just pop them in the over!. before you wrap them however spray with non stick cooking spray and season!. also making soup and freeze it in ice cube trays, and you can heat what ever size you like on the stove top on low heat!. Meatloaf always cooks good!. I make 5 or 6 at a time and freeze it!. Take it out and cook it when ready!.
