one of my favorite, and one of the easiest meals I love to cook is shish cabobs!.

I just buy whatever kind of meat is on sale or sounds good, cut it into cubed, bite size pieces, put it in your favorite marinade for an hour, put on skewers and put it on the grill!. I usually use zuccini and yellow squash, onions, mushrooms, a variety of green red or yellow bell peppers and some fresh pinnapple, also cut into cubes and skewered!.
If you're looking for a faster version, cover your grill with a makeshift aluminum foil pan and just grill the meat and veggies on there!. You can also do this in a frying pan or under your boiler!.Www@FoodAQ@Com

Hi, You already have some great recipe ideas!

Have you tried baked or grilled sweet potatoes yet!? Buy the whole ones and bake or grill them!. (Be sure to prick with a fork before cooking) They taste so sweet so you don't need to add anything to them, although you can add butter if you like!. They also take much less time to cook!. 20-30 minutes on 350 depending on size!. You can test the doneness with the squeeze test!.

I've tried the rice noodles available in the health food section at most grocery stores!. I can't tell the difference from wheat noodles!.

You could try baked potato nachos!. I had these when I visited Texas years ago, and loved them so much I make them at home!.
Press a baked potato flat on a plate!. (the skin can be left on or removed!.)
Then top with all your favorite nacho toppings!. Place in the microwave or oven if needed to melt the cheese!.

Maybe take a look at quinoa as a grain alternative for your daughter!. The grocery stores in my area have quinoa breads and crackers for sale in the health food section!.

Best Wishes!Www@FoodAQ@Com

Ratatouille!
When I watched the movie with my little cousins they asked me to make this for them! OMG IT'S Good!! I ended making it for them the following week and watched the moive again and eating Ratatouille at the same time!. ENJOY!!

also you can add Meat to this as well------we did!!!!

INGREDIENTS:

1 eggplant, 1 - 1 1/2 lbs
1 red pepper
1 yellow pepper
1 zucchini
1 summer squash
1 onion
2 cloves garlic, or to taste
3 tablespoons extra virgin olive oil
2 teaspoons chopped fresh rosemary
3 large vine ripened tomatoes, more if small
chopped fresh basil and parsley, lemon or balsamic vinegar
Sea or kosher salt, freshly ground black pepper

PREPARATION:

Preheat oven to 375
Cut eggplant, peppers, squash and onion into 1" chunks!. Smash the garlic cloves with the side of a chef's knife and mince finely!. Toss with 2 tablespoons olive oil and the rosemary, mixing well!. Salt lightly!. Oil a sheet pan or other large shallow pan and spread the vegetables in a single layer!. Put in heated oven!.
Cut tomatoes into halves (if small) or quarters (if large) and spread in a second oiled pan!. Salt lightly and drizzle with 1 tablespoon olive oil!. Put pan in oven!.
Roast vegetables, turning once or twice to ensure even cooking (tomatoes won't need to be turned) about 45 minutes, or just until tender!. Try to develop some browned caramelized areas on the vegetables because this sweetens and enhances their natural flavor!.
Combine contents of both pans, check salt and pepper level and adjust if necessary, add chopped basil and parsley and give a quick squeeze of lemon or small drizzle of balsamic vinegar and serve hot!.
Leftovers can be served as a cold salad or sliced and served on ciabatta or focaccia with some pesto for a healthy and quick veggie sandwich!. Alternately, put vegetables on the grill or stove top grill pan to create those attractive "grill lines" and finish in the same way as oven roasting!.

Consider Barilla Plus pasta as an alternative to regular wheat pasta when you do splurge on wheat!.!.!. it has a significant portion of legume and other grains in it for flour replacing part of the wheat and it tastes awesome! (much better for you than regular pasta with considerably more fiber and protein in each serving!.) My family never even noticed the switch!.

also you can sub almond or rice milk for most baking and "cooking" recipes where milk is not the "primary flavoring!." In other words I'm not sure how it'd taste in bechamel but it should be fine in nonwheat cookie recipes calling for milk!.

i actually use a bone-in turkey breast!. they come in bigger sizes (trust me, you'll want extras), are easier to find, and having the bone in adds more flavor!.

Crockpot Lemon Sage Turkey with Vegetables

Cooking spray
5 tablespoons butter, softened
Juice of 1 lemon
2 small shallots, finely chopped
1 tablespoon chopped flat-leaf parsley
2 pounds yellow-fleshed potatoes, such as Yukon gold, sliced 1/2 inch thick
Salt and pepper
3 large carrots, sliced 1/2 inch thick
1 boneless turkey breast half (about 3 pounds)
3 fresh sage leaves

Spray the slow cooker with cooking spray!. In a small bowl, mash the butter with half the lemon juice, the 2 shallots and the parsley until combined!.Spread 2 tablespoons of the butter mixture on the bottom of the cooker!. Arrange the potato slices on top!. Season with salt and pepper!. Layer the carrot slices on the potatoes!. Season with salt and pepper!.

Using your fingertips, gently loosen the skin from the turkey breast, leaving it attached on one side!. Spread the remaining lemon butter and the sage leaves under the skin with your fingers!. Season the breast on both sides with salt and pepper!. Place the breast, skin side up, on the vegetables!. Drizzle the remaining lemon juice on top!.

Cover and cook on high until an instant-read thermometer registers 170o in the thickest part of the breast and the vegetables are tender when pierced, 3 to 4 hours!. Transfer the turkey to a platter and let stand for 5 minutes, then slice!. Spoon the vegetables onto plates and serve the turkey alongside!.

my husband is the biggest meat eater ever, but CONSTANTLY requests this meatless dish!. it seems like a lot of vegetables (about 2 cookie sheets) and sometimes i even add a little more than called for, but they really shrink down!. make sure to use a good quality parmesan, as it is a key flavor component!.

Pasta Primavera

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Preheat the oven to 450 degrees F!.

On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat!. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets!. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total!.

Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes!. Drain, reserving 1 cup of the cooking liquid!.

Toss the pasta with the vegetable mixtures in a large bowl to combine!. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten!. Season the pasta with salt and pepper, to taste!. Sprinkle with the Parmesan and serve immediately!.

**************************************!.!.!.
this recipe is AWESOME for all that leftover turkey or chicken!. you can even just buy a rotisserie chicken!. it's pretty versatile, so you can really adapt it any way you want to!. you can garnish with sour cream, salse, gaucamole, olives, etc!.!.!. whatever you want!. it's really good just by itself too! (sometimes i just eat it out of a bowl)

Cold Turkey Tacos

1 tomato; chopped
1 green onion; chopped
2 tablespoons mayonaise
1 teaspoon fresh lime juice
