Peppermint Bark Brownies

1 cup butter, plus more for greasing dish
4 squares unsweetened baking chocolate, chopped
2 cups sugar
1 cup all-purpose flour
4 eggs, lightly beaten
2 teaspoons vanilla extract

1 cup chopped peppermint bark, recipe follows
Preheat the oven to 325 degrees F and grease a 9 by 13-inch baking dish!. Line the dish with a piece of parchment paper that extends up beyond the edge of the pan on the 2 wide sides of the dish and lightly grease the parchment!. The paper will serve as handles when you are ready to remove the brownies from the pan!.

In the top of a double boiler or in a microwave, melt the chocolate and butter until completely smooth!. Add the sugar, flour, eggs, and vanilla and stir to blend!. Stir in the peppermint bark and transfer to the prepared baking pan!. Bake for 35 to 40 minutes, or until a toothpick inserted into the center just comes out clean - it's ok if there are a couple of small fudgy crumbs adhering to the toothpick!. It's better to undercook these slightly than overcook them - these brownies are meant to be fudgy!.

Transfer to a cooling rack and allow to cool completely!. Using your hands, lift up firmly on the parchment paper pieces and transfer to a flat surface!. (If the paper is stubborn, run a thin knife around the edge of the pan, or loosen the brownies slightly with the help of an offset spatula!.) Cut the brownies into 2 1/2-inch squares and serve at room temperature!.


Peppermint Bark:

12 ounces good quality white chocolate, chopped
24 hard peppermint candies
Melt the white chocolate in a double boiler over medium heat or in a microwave, stirring every 30 seconds, until smooth!. Be careful not to scorch the chocolate!.

Place the peppermints in a resealable food storage bag and, using a rolling pin, tap the candies to break into small pieces!. Place the crushed candies into a strainer with medium holes and shake over another bowl - only the very large pieces should remain in the strainer!. Add the melted chocolate to the small pieces and stir to combine!.

Line a baking sheet with waxed paper and pour the chocolate-candy mixture onto the paper!. Using a rubber spatula, spread smooth to a thickness of about 1/4-inch!. Press the large peppermint pieces onto the top of the mixture and transfer to a refrigerator to firm!.

When firm, break the bark into bite-size pieces and place in an attractive serving bowl or package in airtight containers to give as gifts!. Serve at room temperature!.

This is best refrigerated if kept for any length of time!.


Creme De Menthe Brownies

1 cups (2 sticks) butter, softened
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
11/4 cup all-purpose flour
3/4 cup unsweetened cocoa
1/2 teaspoon baking powder
1 (10-ounce) package Creme de Menthe baking chips (recommended: Andes)
Shaved Creme de Menthe thins (recommended: Andes)
Chocolate frosting
Frosting:
1/2 cup (1 stick) butter, melted
1/3 cup cocoa
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
2 tablespoons milk


Preheat oven to 350 degrees F!. Grease a 13 by 9 by 2-inch pan!.
Using an electric mixer, combine butter and sugar in a large mixing bowl; beat at medium speed until creamy!. Add eggs, 1 at a time, beating well after each addition!. Add vanilla, mixing well!.

In a separate bowl, combine flour, cocoa, and baking powder!. Gradually stir into butter mixture!. Fold in mint chips!. Spoon into greased pan!. Bake for 35 minutes!.

While brownies are baking, prepare frosting!. Combine butter, cocoa, confectioners' sugar, vanilla and milk in a large mixing bowl; beat at medium speed with an electric mixer until dry ingredients are moistened!. Beat at high speed until spreading consistency!.

Remove pan from the oven and allow brownies to cool in pan on wire rack!. Spread with chocolate frosting!. Top with shaved mint thins!.


Fudgie Chocolate Brownies

1 teaspoon plus 1 cup vegetable shortening
2 cups sugar
4 large eggs
1/2 cup water
1 teaspoon pure vanilla extract
1 cup bleached all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts
4 ounces semisweet chocolate, chopped
1 recipe Chocolate Icing (recipe follows)

Preheat the oven to 350 degrees F!. Grease a 17 by 12-inch baking pan with 1 teaspoon of the shortening!. In a large, heavy saucepan over medium heat, melt the remaining 1 cup shortening!. Remove from the heat and let cool slightly!. Add the sugar and blend!. Add the eggs 1 at a time, whisking after each addition!. Add the water and vanilla and whisk to mix well!. Add the flour, cocoa, baking powder, and salt and stir to blend!. Fold in the walnuts and chopped chocolate, then spread the batter evenly in the prepared pan!. Bake until the cake springs back when touched, about 25 minutes!. Remove from the oven and let cool for 30 minutes!. Spread the icing over the cake with a rubber spatula!. Let cool completely before cutting into squares to serve!. Slice and serve individual pieces on a large platter!.

CHOCOLATE ICING
Recipe adapted from Everyday is a Party, by Emeril Lagasse, with Marcelle Bienvenu and Felicia Willett, published by William Morrow, 1999
1 pound confectioners' sugar
1/2 cup unsweetened cocoa powder
1/4 pound (1 stick) unsalted butter, at room temperature
1/3 cup boiling water

Sift together the confectioners' sugar and cocoa powder into a large mixing bowl!. Add the butter and use an electric mixer to combine!. Add the water and mix until smooth!. Let cool, then use!. Yield: about 2 cupsWww@FoodAQ@Com

Chewy Brownies
1 c Flour
1 c Powdered sugar
1/4 c Cocoa
1/2 tb Cocoa
3/4 ts Baking powder
1 1/2 oz Semi-sweet chocolate, chopped
3 tb Margarine, tub-style
1/2 c Brown sugar
1 tb Water
2 tb Corn syrup
2 ts Vanilla
2 Egg whites
Preheat the oven to 350!. Line a 8 x 8 pan with foil overlapping dish by about 1 1/2" on 2 ends!. Spray with Pam!. Set aside!. Sift the flour, powdered sugar, cocoa and baking powder into bowl!. Place the chocolate and margarine in double boiler or microwave to melt!. Remove from heat and stir in brown sugar, corn syrup, water and vanilla until well blended!. Using a wooden spoon, beat the egg whites into the chocolate mixture!. Gently stir in the flour mixture just until well blended and smooth!. Transfer the pan to a wire rack and let stand for 15 minutes!. Then, using the overhanging foil as handles, carefully lift the brownies from the pan and place the foil on the wire rack!. Let stand until completely cooled!. Peel off foil!. Cut and trim brownies!.

Chocolate Brownies
How to make Chocolate Brownies: Quantity Ingredients
225g (8oz) soft margarine
100g (3!.5oz) walnut pieces
110g (4oz) plain chocolate
170g (6oz) plain flour
400g (14oz) caster sugar
4 eggs
2!.5ml salt
10ml vanilla essence
2!.5ml baking powder
100g (3!.5oz) chocolate chip



Method
1!. melt the margarine and chocolate together!.
2!. remove heat add sugar mix well
3!. add the vannilla eggs and chocolate chips
4!. sift the baking powder with flour and salt
5!. fold the flour into the chocolate mixture
6!. pour into lightly greased 23cm square or circle pan
7 !.bake at 160c for fifty minutes
8!. remove from oven and leave to cool for 12 hours

Personally I prefer using brown chocolate, for a strong chocolatey taste just add more chocolate!.

Chocolate Chip Brownies
How to make chocolate chip brownies: Quantity Ingredients
115g (4 oz) Butter
115g (4 oz) Plain chocolate, broken
300g (10!.5 oz) Caster sugar
2 Eggs
1 teaspoon Vanilla essence
115g (4 oz) Plain flour
2 tablespoons Cocoa powder
Pinch Salt
100g (3!.5 oz) White chocolate chips



Method
Preheat oven to 180C, 350F, gas mark 4!. Grease 7 inch square cake tin with butter and line with baking paper!. Place the chocolate and butter in a small heatproof bowl and set over a saucepan of gentle simmering water until melted!. Stir until smooth!. Remove from the heat and leave to cool slightly!. Stir in the sugar, salt and vanilla essence!. Add the eggs one at a time, stiring until blended!. Sift the flour and cocoa powder into the mixture and beat until smooth!. Stir in the chocolate chips!. Pour into tin and bake for 35-40 minutes!. Leave to cool before serving the chocolate chip brownies!.

Basic Brownies
Sometimes you just want a basic brownie - these are very quick, easy and yummy!.

Ingredients:
1/2 cup butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs, well beaten
1/2 teaspoon vanilla
3/4 cup flour
1/4 teaspoon salt
1/2 cup chopped walnuts



Directions:
Melt butter and chocolate together in a large saucepan!. Remove from heat and stir in remaining ingredients!.


Pour into a greased 8 inch square pan!. Bake at 350 degrees F!. for 25 to 30 minutes!. Cool and cut into squares!.


Chocolate Fudge Brownies
Very easy!. Very,very fudge-y!

Ingredients:
1 cup butter
6 squares unsweetened chocolate
4 eggs
2 cups sugar
1 tablespoon vanilla
1/2 cup flour
1 cup semi-sweet chocolate chips



Directions:
Melt butter and chocolate together!.


In a large bowl beat eggs!. Blend in sugar!. Add chocolate mixture and vanilla!. Stir in flour and chocolate chips!.

Ingredients:
1/2 cup butter
2 cups semi-sweet chocolate chips (first amount)
1 1/2 cups flour
1 teaspoon baking soda
1 1/2 cups sugar
1 tablespoon vanilla
1/4 cup hot water
4 eggs
1 cup semi-sweet chocolate chips (second amount)
1 cup white chocolate chips



Directions:
Melt butter and 2 cups chocolate chips together!.


In a small bowl mix flour and baking soda together!.


Put melted chocolate mixture in a large bowl!. Add sugar and beat for about 5 minutes until smooth!. With mixer on add vanilla, and gradually add water!. Add eggs one at a time and beat after each addition!.


With mixer on low add flour mixture until blended!. Fold in remaining 1 cup semi-sweet chocolate chips and white chocolate chips!.


Pour into a greased 9 x 13 inch pan!. Bake at 325 degrees F!. for 35 to 45 minutes!. Cool!. Cut into squares!. Store in refrigerator!.



Chocolate Cheesecake Brownies
These are very good, more like a dessert than a square!. I was planning to drizzle melted chocolate over the cheesecake layer, but the top got kind of brown so I made the ganache icing instead!.

Ingredients:
Brownies:
1/2 cup butter
4 squares semi-sweet chocolate
2 eggs
1 cup brown sugar
3/4 cup flour
1/4 teaspoon baking powder
1/3 cup coarsely chopped pecans


Cheesecake Topping:
1 package (8 oz!.) cream cheese, softened
1/2 cup sugar
2 tablespoons butter, softened
2 eggs
2 tablespoons milk
1 tablespoon flour
3 squares semi-sweet chocolate, finely chopped


Icing:
1/4 cup sugar
1/4 cup whipping cream
1/2 teaspoon vanilla
2 squares semi-sweet chocolate
2 tablespoons butter



Directions:
Brownies:
Melt butter and chocolate together!. Set aside to cool!.


In a large mixing bowl, beat the eggs and sugar together until light!. Stir in the flour and baking powder, and the cooled chocolate mixture!. Fold in pecans!.


Pour into a greased 9 inch square pan!.


Cheesecake Topping:
In a large bowl, beat together cream cheese, sugar and butter until creamy!. Beat in eggs, milk and flour!. Stir in chopped chocolate!. Spread over brownie layer in pan!.


Bake at 350 degrees F!. for 40 - 45 minutes!. Cool!.


Icing:
Combine sugar, cream and vanilla in a small saucepan!. Stir to blend!. Place over medium high heat and bring to a boil!. Reduce heat and simmer for 5 minutes without stirring!.


Remove from heat and add chocolate and butter!. Stir until chocolate has melted and mixture is slightly cooled and thick enough to spread!.


Pour over cooled cake!. Chill and cut into squares!. Store in refrigerator!.


Triple Chocolate Brownies
All the chocolate bases are covered with this attractive and tasty brownie treat!.

Ingredients:

1/3 cup butter
