I'm not very picky about spaghetti sauce; I like it easy and fast!. (and healthy) So, I put about a pound or less of regular ground meat (chili meat when I can get it) in my plastic colander which sets in a deep bowl, it is lifted up so that the fat drains off the meat and drips down into the bowl as it microwaves on high for about 5 minutes!. I give it a stir after 3 minutes!. The handle has been sawed off so that it will rotate around inside the microwave on a spinning plate!. After cooking off the fat, then I rinse it with hot water from the faucet!. Allow to drain!.
If you haven't already started the water boiling for the spaghetti, do so now and cook according to pkg!. directions!.
In a big skillet, (but not cast iron) add the meat, and a jar of Ragu spaghetti sauce or your favorite store brand!. I usually hold the empty jar under the faucet and fill it with about half a cup of tap water, swirl it around and pour that in with the sauce too!. Stir it around and mix well!. I usually simmer the meat sauce for about 20 minutes, stirring occasionally!. Watch it carefully so that it doesn't burn and add more water if necessary!. Then add some chopped onion, and let it come to a simmer!. Simmer until the onion is soft and transparent!. If you like, add some sliced mushrooms too!. Now add a stalk or so of celery that has been sliced up!. This gives the meat sauce a homemade taste!. I like to add the chopped celery just b/f serving while it is still crunchy!. Makes the meat sauce seem fresh made!.
Pour the spaghetti into a colander in the sink and pour the spaghetti on a big platter, take up the Meat Sauce and serve with Parmesan cheese and a hot loaf of Italian bread!. A mixed green salad always goes good with this!.
I never get tired of Spaghetti and Meat Sauce cooked this way!. My son prefers Meatballs, so when he is visiting, I accomodate his wishes!.Www@FoodAQ@Com
