Something to go with chicken salad?!

Question: Something to go with chicken salad!?
I'm planning a dinner with just a basic light chicken salad (grilled chicken, romain lettuce, cucumber, grape tomatoes and maybe some cheese) as the main dish!. what else should I serve with the salad!? Like a second dish or something!? Seems like for dinner we should have something else besides chicken salad!.Www@FoodAQ@Com

Answers:
Your chicken salad sounds fantastic as the main dish!. Since that is your main dish, I would just pair it with a fruit cup!. It would definitely make for a light and satisfying meal!. You could also add a few slices of a baguette for extra texture on the side!.Www@FoodAQ@Com

If it was me doing the "light" meal I would make my chicken salad with:

Grilled chicken
Romain and butter leaf lettuces
Fresh Spinach
Cucumber
Avacado
tomatoes
Boiled eggs

Then have some dressings like a raspberry vinegreet on the side, italian, and or ranch!.

I would also bake up some nice crunchy loaves of bread and have butter!. You may even want to do soup bowls which are fun!. You can but the small individual round loafs of french bread and butter the inside and bake until crispy and fill with a lighter soup!.

Then for dessert I think I would have a light orange and lemon bar!.Www@FoodAQ@Com

Sounds like you want to keep it simple!. So, I would actually add 1 ingredient to your salad & 2 items to your overall menu!.

To your chicken salad, I would add a vegetable!. This way you could combine your main dish salad with a vegetable side dish!. You could add blanched whole green beans, either fresh or frozen!. You want to cook them to the point that they still have a bit of crunch!. Then lay them on top of the salad in a pinwheel!.!.!.make it a pretty presentation!. Or you could use asparagus, prepared the same way!.

To your overall menu I would add a whole grain bread with a really good fruit spread!.!.!.or breadsticks!. also add some kind of dessert!.!.!.maybe fresh fruit, like strawberries with whipped cream!. Keep the dessert on the light side like your main dish!.Www@FoodAQ@Com

With chicken salad, I usually serve a cold green bean salad and some dinner biscuits!. It is a very delicious combo!. However I am also thinking of the chicken salad with mayo, etc!. It might work with what you're doing however!.
