Sausage casserole pointers please?!


Question: Sausage casserole pointers please!?
I'm going to make a kind of sausage casserole and I've decided on the basic way I'm going to go but could do with a bit of guidance please!.I saw Jamie Oliver do one but I don't have the recipe and I don't tend to use recipes normally!.

I'm going for a large Cumberland sausage which I'll brown of in olive oil a little!.
Then I'm going to put it a square dish, and arrange some roughly choppped onions , whole cloves of garlic and two or three types of roughly cut fresh tomatoes on top and bung in the oven to finish!.


I think Jamie O used different coloured tomatoes,which I'm planning on using!.(possibly holding a few back to add later so they keep their shape and colour a little when served)!.

So!.Questions!

Any recomendations on the tomato front!?

Onions or shallots!?

Herbs or spices!? I've got basil and possibly a little nutmeg so far!.

Any ideas welcomed!.

by cumberland i presume you mean its curled in a ring !? if so id try putting some sage (sage is a classic with pork)in between the edges or rosemary this will give it a real boost!. tomato wise which ever type you get make sure they are as red as possible these are far superior to ones that are pale colured if your holding some tomatoes back try grilling a beefsteak tomato with some cheese breadcrumbs and herbs on top of a half!. its up to you but i think the nutmeg might clash with the tomatoes
i prefer shallots they have a better flavour (this is why decent restaurants use them for dressings or in salads)Www@FoodAQ@Com
