Question: I need two picnic recipes!!?
I need two picnic friendly recipes, meaning no mayo, sour cream, etc!. I need one pasta/salad/whatever/side dish, and one dessert!. My family picnic reunion is sat and I would like these to be recipes you've tried and liked!Www@FoodAQ@Com

BEAN SALAD
Drain cans of cut green beans, kidney beans, garbanzo beans and wax beans; add sliced red onions and toss with a good quality Balsamic Vignarette or extra zesty Italian dressing!.!.!.!.!.!.!. ( I make this at least once a month)

PEACH BRANDY CAKE
1 21-oz!. can peach pie filling
1 pkg!. yellow cake mix
3 eggs
1/4 c!. peach or regular brandy (can use peach nectar)
1/4 c!. oil
confectiomer's sugar
Mix everything very well in standing mixer (except confectioner's sugar)!.!.!.!. Bake in greased & floured bundt pan (9x13" is ok too - but would take less time) at 350 for 1 hour!. Cool in pan for 10 min!. Turn out and dust with confectioner's sugar!.!.!.!.!.

Both of these items have nothing that will go bad sitting out in the heat!.!.!.!.!. It's harder to find desserts with no chocolate or chocolate chips (which will melt), but this is a cake that I've actually sold in eBay (with fantastic feedback)Www@FoodAQ@Com

INGREDIENTS (Nutrition)
1 (16 ounce) package elbow macaroni
1 cup creamy salad dressing
1 tablespoon cider vinegar
2 tablespoons milk
1 1/2 stalks celery, chopped
1 (6 ounce) can pitted black olives, chopped
1/2 cup chopped Vidalia onion
1/2 cup chopped green bell pepper
salt and ground black pepper to taste

Bring a large pot of lightly salted water to a boil!. Add macaroni, and cook for 8 to 10 minutes or until al dente; drain!.
In a medium bowl, blend creamy salad dressing, cider vinegar, and milk!.
In a large bowl, mix the cooked macaroni, celery, olives, Vidalia onion, and green bell pepper!. Toss with the creamy salad dressing mixture!. Season with salt and pepper!. Cover and chill until serving!.


Fruit Galore Sponge Cake

INGREDIENTS (Nutrition)
1/3 cup vanilla flavored syrup
1 sponge cake
1 cup blueberries
1 cup sliced strawberries
1 (12 ounce) container frozen whipped topping, thawed

Drizzle vanilla syrup over top of sponge cake!. Let soak for 5 to 10 minutes!.
Arrange blueberries on top of cake, then place strawberries on top of the blueberries!. Finish by generously spreading whipped topping over the fruit!.
Serve immediately, or if you prefer, chill in the refrigerator (no more than 2 to 3 hours), until ready to eat!.Www@FoodAQ@Com

Chilled Spaghetti Salad
1 pound thin spaghetti, broken into 3-inch pieces
2 cucumbers
1 green bell pepper
2 medium tomatoes
2 medium onions
1 small bottle Italian dressing
1/2 (2 ounce) bottle McCormick's Salad Supreme Seasoning

Cook and drain spaghetti; set aside!. Peel cucumbers; remove seeds and cut into small pieces!. Cut green pepper, tomatoes and onions into small pieces!. Mix all ingredients with the spaghetti including seasoning!. Pour Italian dressing over all!. Let marinate overnight!.

SUMMER'S HARVEST SALAD

7 ounces macaroni, * see note
1 cup fresh broccoli, flowerets
6 ounces shrimp, cooked
1 small tomato, chopped
1 cup spinach leaves, thinly sliced
1/3 cup red onion, sliced
1/2 cup Italian salad dressing
2 teaspoons salad supreme seasoning
1/2 teaspoon salt
1 dash cayenne pepper
1 boiled egg, grated

Prepare macaroni according to package directions, add broccoli during last two minutes of cooking time; drain!. Combine macaroni and broccoli, shrimp, tomato, spinach and red onion!. Blend together Italian dressing, salad supreme seasoning, salt and cayenne pepper!. Toss dressing with salad mixture!. Garnish with egg and sprinkle with salad supreme!. Serve immediately or cover and chill!. Refrigerate leftovers!. 6 to 8 servings!.

Summer Vegetable Ratatouille
2 onion, sliced into thin rings
3 cloves garlic, minced
1 medium eggplant, cubed
2 zucchini, cubed
2 medium yellow squash, cubed
2 green bell peppers, seeded and cubed
1 yellow bell pepper, diced
1 chopped red bell pepper
4 roma (plum) tomatoes, chopped
1/2 cup olive oil
1 bay leaf
2 tablespoons chopped fresh parsley
4 sprigs fresh thyme
salt and pepper to taste

DIRECTIONS
Heat 1 1/2 tablespoon of the oil in a large pot over medium-low heat!. Add the onions and garlic and cook until soft!.
In a large skillet, heat 1 1/2 tablespoon of olive oil and saute the zucchini in batches until slightly browned on all sides!. Remove the zucchini and place in the pot with the onions and garlic!.
Saute all the remaining vegetables one batch at a time, adding 1 1/2 tablespoon olive oil to the skillet each time you add a new set of vegetables!. Once each batch has been sauteed add them to the large pot as was done in step 2!.
Season with salt and pepper!. Add the bay leaf and thyme and cover the pot!. Cook over medium heat for 15 to 20 minutes!.
Add the chopped tomatoes and parsley to the large pot, cook another 10-15 minutes!. Stir occasionally!.

This I have tried myself and it is good and easy!.Purchase 1 box of Pasta Salad in the original flavor!.Prepare as directed and add in 1 pkg of Pepperoni cut in half or left whole,1 cup of black and green olives,drained;broccoli flourets cut into small pieces!.Can add in some chopped green onion if you like it!.I also put in some coarsly grated carrot!.I add in extra Greek salad dressing as we like our salad "wet" and the macaroni soaks some of it up!.Everyone loves this pasta salad!.Just before serving sprinkly real grated parmesan cheese over the top!.

Another good idea is fruit baskets made out of the watermelon shell!.Cut the melon in half!.Scoop out the watermelon with a melon baller or small spoon!.Leave some around the edges!.Mix watermelon pieces with cantelope,honey dew melons cut up in bite size pieces!.Add in whatever fresh fruit is availabel,blueberries and strawberries,cherries are all good!.Mix fruit together and dump into the reserved watermelon shell!.Cut a zig-zag design around the edge to make it look really festive!.I pick a oval melon as they sit better than the round ones!.But you could cut carefully a small section off the bottom so it will sit!.Cover with foil,haul in a cooler with some ice!.Never have any of this left to bring home!.Www@FoodAQ@Com

I got the dessert!.

7-up pound cake

1 cup butter or margarine
1/2 cup shortening
3 cups sugar
1 1/2 teaspoons lemon extract
1 1/2 teaspoons vanilla extract
5 eggs
3 cups all purpose flour sifted
7 ounces of diet 7-up

make sure butter is soft and beat in the sugar and shortening with a mixer!. Add both extracts!. Add eggs!. Add flour!. If cake looks dry, you may need to add more 7-up!. If it looks too moist, add more flour!.

I use a tube pan or a bundt pan!. Oven should be 300 degrees!. Bake for about 1 hour!. I use a toothpick or a knife to see if it is done!.Www@FoodAQ@Com

If you've never had these, you will be a hit !. Trust me!.

You decide, but don't skimp on the Parmesan!.
Any mixture left, pour over the wings before baking!. Don't waste it!.

Parmesan Chicken Wings

1 cup freshly grated Parmesan cheese (Fresh is Best Flavor)
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon dried basil leaves
1 teaspoon salt
Freshly ground pepper to taste
2 pounds chicken wings, cut up
1/2 cup melted butter
Preheat oven to 375*F (190*C)!.
Combine Parmesan, parsley, basil, salt and pepper together and place in shallow bowl!.
Dip each piece of chicken into the melted butter, then roll in the cheese mixture, coating well!. Place on a greased baking sheet and bake for 45 minutes, turning about halfway when browned!.

how about for the pasta salad u make italian pasta salad its easy and inexpensive!.

u take any kind of pasta personally i like the lil spirals thats multicolored!. i am sure u have seen them!. but newayz!.!.!.!. i boil them in hot water rinse in cold!. throw them in a large mixing bowl and then add some lil red tomatoes, blk olives, of course the italian salad dressing hmm u can add nething u like really i add a lil onion jus to spice it up a lil bit!. other than that try some homemade potatoe salad or baked beans with some bbg sauce and onions cooked in them!? and for dessert try some mini cupcakes with icing or!.!. brownies or maybe even icecream with some whipped cream on top or!.!.!.!?!?!?!?!? those frozen itailan ices!. sounds good to me!. good luck and have a great day!.Www@FoodAQ@Com

well Im the type who just throws it all together!. but this one everone asks for again and again!.

rotelle noodles (the carrot, spinich, plain color ones)
boil till al dente (still a wee bit hard - not too soft)

olive oil
salt
pepper
1 bag of thawed lobster meat (from frosen food section)
this can be crab, too
block mozarella or cheese in cubes or you can cube it
celery finely chopped
onions finey chopped
black olives chopped (optional)
2 small or 1 large jar of pimentoes
a little lemon juice
a little mustard - any kind

Mayo in this is optional, but if no mayo, then olive oil and some balsamic or red wine vinegar

Easy Lemon Pie

Mix one can of condensed milk with one tub of Cool Whip (or store brand whipped topping)!. Add concentrated lemon juice to taste!. I usually use the can from the milk and fill it about 2/3 full of lemon juice!. Mix it all together and pour it into a graham cracker crust or a pie pan lined with Nilla wafer cookies!. Let it cool in the fridge for several hours until it is firm!.

I've used reduced fat whipped topping, but it didn't set up as well as the regular!.
