Whatever you have on hand! Honestly!. I typically have Merlot in the household (my personal fave), but a Cabernet is usually the best all-around generic wine for cooking!.Www@FoodAQ@Com

Let's start with the basic premise!. Don't cook with anything you wouldn't drink!. There used to be stuff on the market called cooking wine and cooking sherry!. Yucko!. Maybe that was for families who were worried the kitchen staff would be tippling!. Basically the worst grade of wine with salt added to make it unpalatable except by the most hopeless wino!.
Having said that, for slow cooking like stews and casseroles, you can certainly use an every day table wine, but still something that you like to drink!.
You mention pasta, though, and let me broaden that to dishes that cook more quickly, where the wine flavor may be more pronounced!. In this case you might want to go with the wine you intend to serve with the meal!. Truly, I think the choice between Syrah/Shiraz, Cabernet or Merlot is a matter of your personal taste!.
I'm a Cab fan at least in part because you can get a decent Cab for $10 bucks or less!. I love a good Syrah, but find I need to pay nearly $30 for one that has that good barnyard stink that makes me willing to pay the price!.Www@FoodAQ@Com
