Sandwich/bread fillings?!


Question: Sandwich/bread fillings!?
I don't usually eat lunch that often but now I'm trying to and I don't want a boring peanut butter sanwich so I'm trying to collect as many sandwich, pita pocket, foccacia or any other type of bread, filling ideas so I need your help and I want you to list as many as possible, the person with the most ideas and interesting fillings will win best answer but only if they are reasonable fillings nothing stupid like brussel sprouts and macaroni cheese!.

You can repeat ingedients as well, they don't all have to be completely different so you can have a tomato, cheese and avacado filling as well as tomato, bacon, cheese and lettuce filling!. I want to just put all of the ideas in a box and randomly pull fillings out!.

I take my lunch to work every single day!. So I only take things that's fast easy and healthy!.

so my options are limited but handy ingredients to keep on pantry are!.!.!.

* small can of flavored tuna!. (lemon, tomato&basil, chili, plane, tomato&onion)!.
You can mix it with penne to make lunch too!.

* mixed vegetables, ie baby spinach and rocket

* sliced cheese

and, good old "last nights dinner" left overs!.

My lunch is done in 2min and it's the healthiest you can get!!Www@FoodAQ@Com

Sometimes a good vegetable sandwich is good!. ( I do eat meat) Cucumbers, lettuce, tomatoes, carrots, etc!. Use a little of some kind of salad dressing so it won't be dry if you don't like mayoWww@FoodAQ@Com

Tuna, onions, lettuce

1!. Pepperoni or salami, provolone cheese, sliced tomato, and a drizzle of balsalmic vinegar!. Toast the bread first so it stays crisp!.

2!. Pastrami on Rye bread with spicy jack cheese

3!. Tuna Ciabatta Melts!. Prepare the tuna how you like it!. Put a slice of tomato and onion on the ciabatta then top with tuna and cheese!. Bake at 375 for about ten minutes!.


4!. Chicken Waldorf Sandwich

2 cups chopped cooked chicken
1/4 cup chopped unpeeled apples
1/4 cup chopped celery
1/2 cup chopped walnuts
1/2 cup sour cream
2 Tbsp!. plain yogurt
1 tsp!. lemon juice
1/8 tsp!. salt
8 slices raisin bread

PREPARATION:
Combine all ingredients in a medium bowl and mix well!. You can store the chicken salad recipe filling in the refrigerator up to two days, tightly covered

5!. Grilled Cream cheese sandwiches:

Cut very fresh french bread into 1/2 inch slices!. Butter one side of each, put one side on pan!. Cut a chunk of cream cheese to taste (mine are about 1/4 in to 1/2 inch thick)!. Spread on the bread!. Top with the best tomatoes you can find!. Salt and pepper!. Add the other slice of bread, buttered side up!. Grill one side until brown!. Flip over, grill the other side until brownWww@FoodAQ@Com

randomly putting things a box is great and all, but can prove very expensive if your wanting to eat fresh and be a little more cost effiencent!. If your wanting different sandwhich every day sure put all the idea's in a box that everyone has suggested and buy it at your local snadwhich shop at lunch time!.

If your going to make it yourself, It would be better to alternate between 2-3 types of meat and 1-3 types of dairy with a combination of fresh and preserved "salad" items each week
ie
WEEK ONE
meats = ham slices, fresh chicken cooked (like BBQ), tuna
dairy = sliced cheddar, ricotta and vintage cheese
salad fresh = coral lettuce, cucumber, grated carrot
salad preserved = semi dried tomato's, grilled zuchinni and gherkins

WEEK TWO
meats = danish salami, cooked beef patties, salmon
dairy = boccinni, fetta and sliced edam
salad fresh = green capsicum, tomato, mushrooms
salad preserved = cook asparagus, grilled eggplant, grilled pumpkin

etc etc!.!.

Something from every section doesnt have to go on the sandwhich every day!. The great thing about food is you can experienment, try different things see what you like!.

Dont just use white bread either!. try different bread types and Bread Brands as well as alternatives ie
White bread, sourdough, grain bread or rolls
Rice cakes, or wheat/rye crackers
Wrap bread etc!.

also there are far more to spreads than mayo, pickles and mustard!. Try a lil pesto, or your ordinary sauce's ie BBQ, tomato, HQ etc!. And dont forget dips like eggplant dip , or tzakiki, hommus, salsa's make great spreads on your sandwhich as well!.

also you can try putting salads on sandwhich's as well like coleslaw, tabouli etc!.

This may sound weird, but I enjoy a good tomato sandwich!. Since you don't eat mayonnaise, I'd suggest just drizzling a little oil and vinegar on it to moisten things up, but I usually eat it with ~4 slices of tomato and some light mayo!. It's pretty good as far as 'veggie' sandwiches go!.

Anyway, I also like chicken with avocado, a thin slice of tomato, some sweet baby lettuce, and maybe a couple slices of bacon!. I usually eat this sandwich as a wrap or on Jewish rye bread!. If I eat it as a wrap, I get those sundried tomato/basil tortillas they make these days!. They're pretty good, and it also cuts back on the carbs/calories from bread!.


Fish (catfish, tilapia or other 'white' fish are my favorite), coated in panko or breaded, with remoulade and any veggies you like!. Usually eat this on a French baguette because the fluffiness of the bread complements the crunchy sandwich!.


Portabella mushroom(s) with your normal sandwich toppings!. They have a good flavor and are often substituted for hamburger!. I like these sliced up and in a wrap as well, but they work in pitas or any other bread you like!.

When I packed lunches I used mainly single filling sandwiches so there was variety!.
I could list dozens as fillings,
Ham and Mustard
Lettuce and Vegemite
Tomato
Cheese and Onion
Sardines and lemon juice (Tuna or salmon as treats)

Specials!.
Club Sandwiches
Take four slices of bread and spread them with butter or margarine!.
On the first slice place ham and some mustard!. (Optional)
Place the second slice of bread on top of Ham, and cover with mashed egg, seasoned with S&P!.
Place the third slice of bread on top of egg, and cover with de seeded tomato, seasoned with S&P
Top with forth slice of bread, spread side down!.
Cut crusts from the sides and cut into fingers!.

If possible get a loaf of caterers sliced bread!.
It is cut lengthways, instead of across, so you can make several at a time!.

Rolls!.
Take a slice of sandwich bread and spread it with butter or margarine!.
With a corner of a square or rectangle of bread pointing toward you, place across bread corner to corner the filling and roll up!.
Fillings to consider:
Shredded chicken with some S & P or mayo
Asparagus spears
Surimi, a few slim slices of lettuce and a seafood dressing!.
Present with the open ends upper most so people will see the filling they wantWww@FoodAQ@Com

Okay I now that I understand what you mean by putting everything is a box and drawing them out I think it's a great idea!. Seperate them between breads, dressings/sauces, fillers -meats&salads (tuna, egg, chicken etc!.!.!.), and then veggies!.

And I also admit to liking a macaroni and cheese sandwich!. Very simple!.!.!.!.mac and cheese-hot, soft white bread, just a bit of butter on each slice of bread and wala, when you are craving carbs!.!.!.this is how to do it!.!.!.

Crackers with various lunch meats, or summer sausage, and cheese is good also!.

also do you like miracle whip instead of mayo!? Or would you use a vegetraian mayo with no eggs!. If so then these would be some good dressing type ideas!.!.!.!.

Mayo sub of your choice with the following mixed in!.!.!.

itallian dressing
plain yellow mustard
raspberries viniagarette
horseradish
dried thyme

I'm also bummed you don't like cream cheese cuz thats a great spread for sandwiches!.

Or these were on rachel ray today, I haven't tried them of course but here goes!.!.!.

Chipotle Cranberry Cilantro Sauce

Ingredients
1 chili from a can of chipotles in adobo sauce, finely chopped
2 tablespoons chopped cilantro
1 15-ounce can of whole-berry or jellied cranberry sauce

These are dipping sauces but they would also work for sandwiches!. It is a video clip so I'll just post the addy

Cranberry Chive and Shallot Sauce
Ingredients
1/2 small shallot, finely chopped
2 tablespoons chives, finely chopped
1 15-ounce can of whole-berry or jellied cranberry sauce

Apple-Walnut Cranberry Dipping Sauce
Ingredients
1/4 cup walnuts, chopped
1/4 cup cinnamon applesauce
1 15-ounce can of whole-berry or jellied cranberry sauce

Tangy Sauce:
? cup buttermilk
2 tbsp sour cream
1 tbsp honey
1 tbsp apple cider vinegar

Creamy Poppysead dressing

Fave vinigiarette-drizzled on just before eating

I also like just a dab of ketchup on my sandiwches for a little tangy-ness

Plain horseradish, or horseradish sauce

B-b-q sauce

B-b-q and ranch mixed together

Ruhbarb B-B-Q sauce:
Ingredients:
1 heaping cup chopped fresh or frozen rhubarb
2/3 cup water
1 medium onion, finely chopped
1 teaspoon canola oil
1 garlic clove, minced
2/3 cup ketchup
1/2 cup packed brown sugar
1/2 cup dark corn syrup
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1-1/2 teaspoons hot pepper sauce
1/4 teaspoon salt
Directions:
In a small saucepan, bring rhubarb and water to a boil!. Reduce heat; simmer, uncovered, for 5-6 minutes or until tender!. Remove from the heat; cool slightly!.
Place rhubarb in a blender or food processor; cover and process until smooth!. Set aside!.
In the same saucepan, saute onion in oil until tender!. Add garlic; saute 1 minute longer!. Add the remaining ingredients!.
Whisk in rhubarb puree until blended!. Bring to a boil!. Reduce heat; simmer, uncovered, for 5 minutes!. Use as a basting sauce for grilled meats!. Store in the refrigerator!.

*****I use one piece of rhubarb and reduce the recipe according to much chopped rhubarb I have!.

Meats/Salads

Tuna salad, add a little green chopped green onion, chopped celery, fresh squeezed lemon juice and a drizzle of olive oil, quick dash of celery seed!.

Chicken Salad:
If you like a mayo sub of somekind then chop up some cooked chicken, add some chopped celery, red grapes cut in halve, candied nuts, and salt and pepper

Tuna Salad with the mayo sub

Egg salad
Mayo sub, hard boiled eggs, a drop of mustard (I don't like mustard either but when it's mixed with mayo/or your sub of choice it's just right!.) A drop of pickle juice (I have same feelings about pickles as mustard but worse, but the pickle huice is good) or I guess you could use a little lemon juice instead!. Paprika, celery salt, and salt and pepper

Choppe Ham salad
Basically same as the above creamy salads but with canned ham, or even some left over ham chopped up small
sliced ham

Seafood Salad
same as above but with imitation crab meat and canned tiny shrimp!.

Salmon salad
Use smoked salmon or canned salmon drained

sliced roast beef

cold rostisserie chicken

man I wish you liked turkey

left over chicken sliced or pulled
