Question: Tonight i'm cooking!.!.!.!.!.!. i need a sause to go with it!?
Tonight i'm cooking fish, mash, and other veggies i need somthing to go with it because i think it will be to dry on its own!. what can i do with it!.!.!.
i have,
Milk
butter
handful of cheese
1 tomato
soy sause
sweet chilli sause

its for 1 person, they don't like not hot/spicy food and are quite fussy!

Cheese sauce for

Half pint of Milk, warmed
2oz Cheese, grated
Three quarters of an ounce Plain Flour
Three quarters of an ounce Butter


Melt the butter in a saucepan over a low heat!.
Stir in the flour and cook gently for 2-3 minutes!.
Remove from the heat and gradually add the milk, stirring constantly to avoid lumps!.
Bring to the boil, still stirring, simmer for about five minutes, stirring occasionally!.
When smooth and creamy, stir in the grated cheese a little at a time, until melted!.
If the sauce is too thick, add a little extra milk!.Www@FoodAQ@Com

mash, make it more runny than usual!.
grill the '1' tomato on the grill, and then season it with some herbs-pepper (if u don't have any herbs)
if u have coconut milk, then u can make it with the mash!.

1!. WHITE SAUCE

Makes 250ml

INGREDIENTS

2 tablespoons of butter
2 tablespoons of flour
250ml of milk

METHOD

Put the butter into a saucepan on a medium heat!. Melt the butter!. Add the flour and cook for a minute, stirring all the time!. Take off the heat!. Add the milk a bit at a time!. Stir each time to make sure it is smooth!. When all the milk has been added, put the pan back on the heat!. Bring to the boil!. Keep stirring!. Turn down the heat until it is just boiling (simmering)!. Cook for 2 minutes, stirring all the time!.

ADDITIONS AND ALTERATIONS

If the sauce is too thin, add a little bit more flour!. If the sauce is too thick, add a little bit more milk!.

TIPS

The trick is to keep stirring!.

PS!. If you've got any, add some chopped parsley!.

2!. CHEESE SAUCE

35g of mature Cheddar cheese
1 tablespoon of butter
1 tablespoon of flour
250ml of milk
Ground pepper to taste

Put the butter into a saucepan on a medium heat!. Melt the butter!. Add the flour and cook for a minute, stirring all the time!. Take off the heat!. Add the milk a bit at a time!. Stir each time to make sure it is smooth!. When all the milk has been added, put the pan back on the heat!. Bring to the boil!. Keep stirring!. Turn down the heat until it is just boiling (simmering)!. Cook for 2 minutes, stirring all the time!.

Take off the heat!. Add the cheese to the sauce and mix!. Continue to stir until the cheese has melted into the sauce!. Season with the pepper!.

ADDITIONS AND ALTERATIONS

If the sauce is too thin, add a little bit more flour!. If the sauce is too thick, add a little bit more milk!. Don’t forget that adding more cheese to improve the flavour will also thicken the sauce!.

Use other full flavoured cheeses!. Use ready grated cheese!. Add 1 teaspoon of whole grain mustard!.

TIPS

How about a hollandasie sauce to go over the fish and even the veggies (specially if they are green veggies that hollandasie will go really well)

You can either use the powdered mix you buy at the grocery store or make it your self!. My friend who is a chef gave me this simple recipe!. It's take longer to explain it than to actually make it!.

1 egg-(I think she even said to use just the yolk but I use the whole egg and it works out beatifully)
A pinch of salt, sugar, or even a quick splash of lemon juice or white wine-what ever you have on hand!. I usually use lemon juice or sugar!.
2 sticks of butter melted and left to sit and seperate for a few min-but it still needs to be very hot!.

about 2-3 drops of hot sauce

Break the egg into a metal heat prook bowl!. One that has a nice rounded bottom is the best!. Add the sugar, juice etc and whisk until the egg starts to get kind of thicker and frothy!.

Set the bowl on top of a med low flame or heat setting and whisk constantly until it thickens even more!. Whisk continually or you will curdle and scramble the egg!. The addition of the salt, sugar or what ever you used helps the egg be able to withstand higher heat without scrambling!. When the yolk has thickened and changed color slightly take it off the heat (about 2-3 min maybe) Most people will tell you to use a double boiler but there is no need as long as you keep it moving!.

Set the bowl on a wet towl rolled and put into a circle shape, this will help stablize the bowl and help to keep it from wobbling all over!.

Slowly add the melted butter a little at a time, Mixing constantly!. Amazingly enough the more butter you add the thicker it will get!. It will also get a nice light color to it!. Just don't add the water that has separated to the bottom of the butter!. Using the hot butter cooks the egg because when you had it on the stove it didn't get hot enough to really cook it!.

Now add a little salt and hot sauce to taste!.

If the sauce start to cool you can slightly reheat it over the same medium low heat and just whisk the diskens out of it!. Just be careful not to over cook it!. Only once though!. If you end up with left over sasuce put it in the fridge and mix it in with some meat loaf mix!.

If you have left over butter drizzle it over the veggies!.

But like I said if you want to use the packaged mix then go ahead it is also a good product and very very easy!.

I don't like hot sauce wither but the 2-3 drops just adds a little depth to the flavor and will not add any heat!. For best results put the drops into the lid of hot sauce then add to the sauce!.

Or a pesto sauce would be good!. I haven;t made my own in a long time cuz my mom-in-law does hers so well!. But when is a pich I've also used the powdered mix for that too and it is good!.

Cook the fish in parchment!. Make a flavor sauce with the soy sauce, and hmmmm a little sweet chili sauce, and a little ground ginger if you have it!. You want just enough to lightly cover the frish!. Wrap in parchment paper and fold parchment to make a little envelope!. Bake at 350 for about 10-15 min to steam the fish!. You could even us e alittle foil if needed!.

Or squeeze on some fresh lemon juice, sprinkle with a little dill weed and lay on a fresh rosemary sprig!. Steam in the parchemnt!.


Now for the mashed taters!.!.!.!.

If you have evaporated milk use that instead of reg milk, it has a nice thick and creamy-ness to it that goes great for mashed and gravy as well!.

Add in some cream cheese with the milk!. And sprinkle with cheese just before serving or just after and let it melt!.

Mashed Potato Tips:

1!. Don't over boil the potatos the way to tell when they are done is just when a fork can be poked all the way thru a potato with out any force!.
2!. Drain well or you will have a thin watery mashed potato!.
3!. When you emtpy your potatos back into the bowl to mash, weather you hand mash or use a mixer just mash the potatos and seasonings without the butter and milk first!. Then when you get the consistentcy you want add some milk and butter and stir/fold it in!. Potatos can sometimes get a glue like consistentcy due to the starch, mixing them "dry" first helps to prevent that!.

Seasoning ideas!.

I like to use white pepper in my potatos, but don't use as much it's very strong!.

I also like garlic powder/salt, onion powder, seasoned salt, and celery salt!.

If they taste a little bland add a dash or two more salt, the salt helps to bring out the buttery, creamy-ness of the potatos!.

Cream is good in mashed, and I also like to use condensed milk, it has a nice consistncy with out being to overboard and is realtvly cheap!.

Other good future ideas for the wet ingredients include, butter milk, ricotta cheese, a little crumbled feta cheese or even blue cheese if you like it, sour cream, etc!.!.!.!.

also a clove of chopped garlic would also be good mixed in!.
