we are all used to tomato catsup, but there are actually recipes for all sorts of other catsups!.
i think it would be interesting to make a blueberry catsup sauce - (no tomatoes at all)!. it might be great!. even if it wasn't great, it would be something interesting to talk about!.Www@FoodAQ@Com

Blueberry buckle
Ingredients:
6 cups fresh blueberries, washed
1/4 cup instant tapioca
1 tablespoon lemon juice
1 cup rolled oats
1/2 cup flour
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup butter or margarine, melted
2/3 cup light brown sugar
1/3 cup granulated sugar
Preparation:
Preheat oven to 350°!. Combine the blueberries, tapioca and lemon juice in a large casserole dish!. Mix well and let stand for at least 15 minutes!. In a separate bowl combine the remaining ingredients!. Smooth the mixture over top of the berries, covering completely!. Bake at 350° for 45 minsWww@FoodAQ@Com

1 1/8 cups white sugar
4 1/2 tablespoons butter, softened
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 cup whole milk
1 1/2 cups white sugar
3/4 teaspoon salt
1 1/2 tablespoons cornstarch
1 pinch ground cinnamon
3/4 cup boiling water
Preheat the oven to 350 degrees F (175 degrees C)!. Lightly grease an 11x7 inch baking dish!.
Spread the blueberries out to cover the entire bottom of the baking dish!. Squeeze the juice from the lemon over them!. In a medium bowl, stir together the butter and 1 1/8 cups sugar until smooth!. Stir in flour and baking powder alternately with the milk until smooth!. Batter will be thin!. Spoon over the berries, and spread evenly!.
In a small bowl, stir together 1 1/2 cups of sugar, salt, and cornstarch!. Sprinkle over the top of the batter!. Dust with a pinch of cinnamon, then pour the boiling water over the entire dish!.
Bake for 45 minutes in the preheated oven, or until golden brown!.
Serves 8!.

Preheat oven to 375 degrees F (190 degrees C)!. Grease one 8x8 inch pan!.
Cream together 3/4 cup sugar, shortening, and egg!.
In a separate bowl mix together 2 cups flour, baking powder, and salt!. Stir into sugar mixture, alternating with milk!. Stir in blueberries!. Pour into greased 8x8 inch pan!.
To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter!. Sprinkle over cake batter!.
Bake at 375 degree F (190 degrees C) for 25-30 minutes!.

3 teaspoons vanilla extract
2 1/4 cups white sugar
2 cups shredded zucchini
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 pint fresh blueberries
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease 4 mini-loaf pans!.
In a large bowl, beat together the eggs, oil, vanilla, and sugar!. Fold in the zucchini!. Beat in the flour, salt, baking powder, baking soda, and cinnamon!. Gently fold in the blueberries!. Transfer to the prepared mini-loaf pans!.
Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean!. Cool 20 minutes in pans, then turn out onto wire racks to cool completely!.
Serves 6!.

I used to have blueberry bushes too!. (We moved) One of my favorite ways to use fresh blueberries was to make a fruit salad with cut up watermelon & blueberries!. The colors look awesome & the flavors really play off each other quite well!.
