You can dice them and add to curries or spag bog, even sweat them down with some onions and veges (your choice) and make a fritata out of them, thats very yummy, I add them to lasagne as well, caramlising onions, just means sweating them down, add a little oil and or butter to a pan and keep stirring them till they are completely limp and brownish looking not burnt though, so slowly does it, stuffed peppers as you call them (we call them capsicums) you can mix mushrooms, onions, rice (cooked) and other bits and pieces like diced bacon or chicken etc!., then all you do is take the top of the pepper, make sure you devein it (the white bits inside cause they are bitter) then you put you stuffing mixture into the whole capsicum and cook it that way, you can sprinkle cheese on the top or put the lid back on to cook it a bit faster, sometimes, I use a potato peeler and get a mixture of colours of peppers and slice the side of the pepper so it looks like a long thin slice and put them into a tossed salad very nice that way too, using them that way again, add onion too and put over sausages or steak, anyway, hope this helps you, goodluck and good tucker yum! :)Www@FoodAQ@Com

Peppers, roast them on a fire or barbeque, if possible!. If not, doing it in the over is fine, so the skin is blackened!. Peel the skin off once cooked and the pepper will be absolutely delicious!. This can be an appatiser, or an accomniament, or you could make a sauce by finely chopping it, then adding white wine and some chicken stock for a little sauce!.

Caramelise onion, get a hot pan, add some olive oil, then some butter, add the onions, thinly sliced, add a sprinkle of salt, and stir now and again, and they should become caramelised!.Www@FoodAQ@Com

Stuffed peppers do it for me!. Mix some chili pwd with other favorite seasonings, chopped green onion tops and add partially boiled, and drained wild rice!. (If you have saffron - don't i wish- add about 1/8 tsp to the mix and spoon into pepper shells that have been seeded!. Spoon about 1 tablespoon water in each one and place in a baking pan!. Add your favorite tomato sauce and bake for about 15 - 20 min!. For the last couple minutes, add a little shredded sharp (my favorite) cheddar cheese and return under broiler just until cheese browned and melted!.

Serve immediately!.

For caramelized onions, I slice them thin, add a tiny bit of EVO and cook until transparent!. then, I add a little Worcestershire sauce, a couple drops hickory smoke and about 1/2 tsp brown sugar!. Watch, they will burn fast, so be careful and don't walk away!.

Good eating!. Hope you like it!. Everyone's tastes are different, and feel free to change it any way you wish!. I might add that i don't use salt, but you might want to add a little when cooking the rice!.

I forgot to say that I only use cast iron skillets and spiders!.Www@FoodAQ@Com

Turn your temp down add a small amount of water to the pan, along with your oil, spices!. This will help it soften up!.
However you do not want it to boil in the water, it will be way to soft!. and mushy yuck!

You could always chop them up and toss them in with the rice just as it is finishing up cooking!

slice them long ways, add olive oil, black pepper, and sea-salt!. Put all of that in a tupperware or something with a lid, then shake it up, coating the peppers with the oil, pepper and salt!.
Then either broil them in the oven or put them on the bbq grill!.
