Zucchini “Apple” Pie

6 c!. zucchini, sliced
2 Tbs!. Lemon juice
Dash of salt
? c!. sugar
? c!. brown sugar
1 ? tsp!. cinnamon
1 ? tsp!. cream of tartar
Dash of nutmeg
3 Tbs!. self rising flour
9” pie crust and top
1 Tbs!. butter
Pick out large zucchini, but still tender enough that you can pierce the skin with your thumb nail!. Peel, cut into quarters lengthwise, remove the seeds and slice crosswise!. Cook until tender crisp, add lemon juice and salt, set aside!.
Take a large mixing bowl and mix together sugar, cinnamon, cream of tartar, nutmeg, and flour!. Mix well, add zucchini mixture and mix well together!. The mixture may be runny, but that is alright!. Pour the mixture into the pie crust, add a few dots of butter and cover with top crust!.
Bake at 400o for 40 minutes or until golden brown!. Serve while still warm and don’t tell anyone what they are eating until they finish!. If they like it, you can thank Bill Nichols!. If they don’t like it, don’t give them a second helping!.

Add egg to zucchini and beat lightly with a fork, then stir in buttermilk!. Add the zucchini mixture to dry ingredients, stir gently!. Turn out onto a floured counter or board, knead gently 6 times and add flour as needed!. Pat dough to 3/4" thick cut biscuits with a 2 1/2" biscuit cutter!. You can make like Zucchini boats if you want them raw!. Cut the into portions and scoop out little holes that you can fill with just about anything, cream cheese or Flavored sour cream!. You can saute them with chicken or other veggies, like a stir fry!. You can deep fry them or bake them in the oven with olive oil and Parmesan cheese!. POUR barbecue sauce over zucchini; stir until zucchini is evenly coated!. Sprinkle with the dry stuffing mix!. Drizzle with butter; cover!.

deep fry it, flour eggwash four (all seasoned) after you fry it and while you drain the oil throw parm cheese on it and the sauce i would dip it in is like half ranch, half horseradish sauce and a couple Tablespoons of franks red hot!. don't forget to season the zucchini, i just use salt garlic powder and black pepper!.

i love using zucchini to cook with, especially in the summer when they are nice and fresh! i love to layer zucchinis in a cassorole pan with sliced (round) bell peppers, tomatoes, onions and garlic with a little bit of olive oil and seasonings!. works well with eggplant too!. i also like to sautee it with other vegetables and use it over pasta!.Www@FoodAQ@Com

You cut the zucchini in sizable pieces!. Then put a slice of American cheese on top and melt that in the oven for about 5 - 10 minutes!. It is really yummy!.
