Clean, cut and blanch your broccoli and find a recipe for either Scalloped or Au Gratin potatoes that you like - some call for onions and other things and not knowing what you like that would be a difficult call for me!. Prepare your chosen potato recipe, cutting back on the amount of butter called for because your sausage will be adding fat to your potatoes, mix in your broccoli and sliced/diced smoked sausage then bake according to recipe directions!. I make something like this all the time but I usually use Betty Crocker boxed potato mixes since I don't always have the time to make my potatoes from scratch!. It is really very good and quite filling!. Serve with a salad!. also, any recipe calling for ham can be used substituting your smoked sausage for the ham!.

Scalloped Potatoes

Ingredients
1 cup chopped onion (1 large)
2 cloves garlic, minced
1/4 cup butter or margarine
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2-1/2 cups milk
8 cups thinly sliced red, white, long white, or yellow potatoes (about 2 1/2 pounds)
Broccoli
Smoked sausage or ham - at least 1 pound

Directions
For sauce, in a medium saucepan cook onion and garlic in hot butter until tender!. Stir in flour, salt, and pepper!. Add milk all at once!. Cook and stir over medium heat until thickened and bubbly!.

Place half the sliced potatoes in a greased 3-quart rectangular dish!. Top with half the sauce, half the broccoli and half the smoked sausage!. Repeat layers!.

Bake, covered, in a 350 degree F oven for 45 minutes!. Uncover and bake for 40 to 50 minutes more or until potatoes are tender!. Let stand, uncovered, for 10 minutes before serving!.

Makes 10 servings

Cheesy Scalloped Potatoes: Prepare as above, except gradually add 1-1/2 cups shredded cheddar, Gruyère, or Swiss cheese (6 ounces) to the thickened sauce, stirring until cheese melts!.

Almond Broccoli Salad



4 large Yukon gold potatoes, sliced 1/4-inch thick
5 tablespoons extra-virgin olive oil, divided
2 tablespoons grill seasoning blend, 2 palm full (recommended: Montreal Steak Seasoning by McCormick Grill Mates)
2 tablespoons rosemary leaves, 3 sprigs, stripped and chopped
2 navel oranges, peeled and chopped
1 small red onion, thinly sliced
4-5 cups arugula, chopped, 2 bunches
2 tablespoons red wine vinegar

Place potatoes in large bowl and toss with about 3 tablespoons extra-virgin olive oil, 2 tablespoons grill seasoning and rosemary!. Grill potatoes 4 to 5 minutes on each side!.
While the potatoes are cooking, combine oranges and red onion and dress with red wine vinegar and some extra-virgin olive oil!.
Remove the potatoes from the grill to the dressed oranges and onions, toss to coat!. When you grill potatoes they will be slightly drier than when you use other methods of cooking!. By adding the potatoes to the dressing while they are hot, they really will soak in the dressing!.





1/4 pound thick-cut bacon, diced
1 pound pork butt / pork loin, cut into 1-inch cubes
1 pound smoked sausage, cut into 1/2-inch slices
1/2 pound andouille sausage, cut into 1/2-inch slices
1 red onion, chopped
1 cup thinly julienned red bell peppers
1 pound boneless chicken thighs, cut into 1/2-inch cubes
2 celery stalks, thinly sliced
2 cloves garlic, chopped
1/4 cup chopped parsley leaves
3/4 cup plus 1/4 cup chopped green onions
2 teaspoons cayenne, or to taste
Salt and pepper
1/2 cup water
2 sourdough bread loaves
1 pound Havarti cheese, thinly sliced

Preheat oven to 200 degrees F!.
In a large cast iron pot or heavy-bottomed braising pan over medium-high heat, cook the bacon until crisp and fat is rendered!. Remove bacon and drain on paper towel!. Set aside!.

Add pork to the pan with the bacon fat and cook on medium to high heat until pork is browned on all sides, about 5 to 6 minutes!. Add the sausage, onions, and bell pepper!. Cook until onions are translucent!. Next add the chicken, celery, and garlic, parsley, and 3/4 cup chopped green onions!. Cook until chicken is cooked through, about 5 to 7 more minutes!. Add the cayenne and season with salt and pepper, to taste!. Stir in the water, cover and let sit for 1 hour!.

Cut bread lengthwise and place in oven to toast lightly!.

Spoon some of the pork mixture on the bread bottoms, top each with slices of cheese, the reserved bacon and the remaining green onions and finish with the bread tops!. Serve immediately!.

10 slices bacon, cooked and crumbled
3 green onions, sliced
2/3 cup mayonnaise
1/4 cup honey
1 tablespoon fresh lemon juice
1 (3!.75-ounce) package honey roasted sliced almonds

In a medium bowl, combine first 5 ingredients!.

Down Home Casserole

INGREDIENTS:
6 slices bacon
4 potatoes - peeled and sliced
thin
1 large head fresh broccoli,
chopped
1/2 cup chopped celery 2 carrots, chopped
1 onion, chopped
1 pound kielbasa sausage, cut
into 1 inch pieces
salt and pepper to taste

DIRECTIONS:
1!. In a large, heavy skillet over medium high heat, fry the bacon until crisp, about 10 minutes!. Remove the bacon and leave the fat in the skillet!.
2!. Then place the potatoes, broccoli, celery, carrots, and onion in the bacon fat, reduce heat to medium and saute for 5 minutes!. Place the kielbasa over all, to allow the juices to trickle down over the vegetables!.
3!. Saute for 5 to 10 more minutes, or to desired tenderness on the vegetables!. Season with salt and pepper to taste, crumble the reserved bacon and return it to the skillet, and stir to combine!.


you can use regular potatoes for this instead of au gratin or you can make your own au gratin instead of a packaged mix!. you can use fresh or frozen broccoli

Sausage Potatoes

INGREDIENTS:
1 pound fully cooked smoked
sausage, halved lengthwise
and sliced
1 medium onion, chopped
1 tablespoon vegetable oil
4 medium carrots, julienned
1 (5!.5 ounce) package au
gratin instant potato mix 2 2/3 cups water
1/4 teaspoon pepper
1 (10 ounce) package frozen
broccoli cuts, thawed and
drained
1 cup shredded Cheddar
cheese

DIRECTIONS:
1!. In a large saucepan or Dutch oven, cook sausage and onion in oil until lightly browned; drain!. Stir in carrots, potatoes with contents of sauce mix, water and pepper!. Bring to a boil!. Reduce heat; cover and simmer for 10-20 minutes or until vegetables are tender!. Stir in broccoli; cover and cook 5 minutes longer or until heated through!. Sprinkle with cheese; cover and let stand until cheese is melted!.

Au Gratin Potatoes

INGREDIENTS:
1 cup sour cream
1 (10!.75 ounce) can
condensed cream of celery
soup
4 1/2 cups peeled and
shredded potatoes
2 cups shredded Cheddar cheese
1/2 cup chopped green onions
1 cup cornflakes cereal
1/2 cup unsalted butter, melted
1 tablespoon chopped fresh
parsley (optional)

DIRECTIONS:
1!. Preheat oven to 350 degrees F (175 degrees C)!. Spray one 8 inch square baking dish with vegetable cooking spray!.
2!. In a large bowl, stir together the sour cream and soup!. Add grated potatoes, cheese, and onions!. Mix well, and pour into the prepared baking dish!. Cover the dish with a lid or aluminum foil!.
3!. Bake for 45 minutes in the preheated oven!. In a small bowl, mix together the melted butter and cornflakes!. Sprinkle over the top of the potatoes, and return to the oven!.
4!. Bake uncovered, for an additional 20 minutes or until bubbly and corn flakes are golden brown!. Remove from the oven and sprinkle with chopped parsley!.Www@FoodAQ@Com

Cut the potatoes in small cubes and boil in salted water first!. Blanch the broccoli and cut the sausage in small cubes!. Then find a basic quiche recipe and add these three ingredients!.Www@FoodAQ@Com
