Just Plain old Baked Zucchini?!?!
I have a very large zucchini I want to make for my kids but I need just a simple plain recipe!. No frills, no special sauces, I've never had zuchini before and I want it to be a success with a picky 2 year old!.Www@FoodAQ@Com

slice them long ways, add olive oil, black pepper, and sea-salt!. Put all of that in a tupperware or something with a lid, then shake it up, coating with the oil, pepper and salt!.
Then either broil them in the oven or put them on the bbq grill!.

Zucchini Casserole -- DELISH!!
INGREDIENTS
1 1/3 cups sliced zucchini
3/4 cup water
1 medium onion, chopped
1 tablespoon chopped green pepper
1 egg
1/2 cup mayonnaise
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup crushed butter-flavored crackers
DIRECTIONS
In a saucepan, combine the zucchini, water, onion and green pepper; bring to a boil!. Reduce heat!. Cover and simmer for 5 minutes or until vegetables are crisp-tender; drain!.
In a bowl, beat the egg!. Add mayonnaise, Parmesan cheese, salt and pepper; mix well!. Stir into vegetable mixture!. Transfer to a greased 1-qt!. baking dish; sprinkle with cracker crumbs!. Bake, uncovered, at 350 degrees F for 25-30 minutes or until golden brown!.Www@FoodAQ@Com

x Oregano
x Salt

x Grated parmesan cheese, or
Ff mozzarella if you prefer
Wash the zukes and slice into planks about 1/8" to 1/4" thick!. I
prefer not to peel them, but do sometimes if the skin is bruised or
unattractive!. If the zukes are large (long), cut the planks in half!.
Arrange the planks on a baking sheet!.
Crush the garlic (I cheat and use chopped garlic from a jar) and
spread it on the zucchini!. When in doubt, use more

Sprinkle on a little basil and oregano, salt and pepper to taste!.
Sprinkle on a little grated parmesan cheese!.
Cook under the broiler 5 - 8 minutes until the zukes are tender, and
the cheese is brown!.

1 cup sour cream
1/2 cup parmesan cheese -- grated

Preheat oven to 350F!. Lightly grease 8" x 8" x 2" dish!. Scrub zucchini!. Cut crosswise in 1/4 inch slices!. Combine flour with salt, oregano, and pepper!.
Toss slices in seasoned flour to coat well!. Slowly heat oil in large heavy skillet!. Sauté zucchini until brown!. Drain!. Place zucchini in bottom of dish!. Add tomato slices on top of zucchini!. Sprinkle a little more oregano and salt in sour cream and spread over tomatoes!.
Sprinkle parmesan cheese over top!.
Bake 30-35 minutes until cheese melts!.

4 to 6 servings
Batter:
1-1/2 cups all-purpose flour , divided
2 tablespoons cornstarch
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup milk
1 egg , lightly beaten
CRISCO Shortening for deep frying
Vegetables:
Choose any combination of the following:
1/4 inch slices zucchini , trimmed green beans, large mushrooms
1/8 inch slices carrot
1/8 inch slices sweet potato
1/2 inch strips green or red bell pepper
Combine 1 cup flour, cornstarch, baking powder, salt, pepper, milk, and egg in medium bowl!. Stir until smooth!. Refrigerate 30 minutes!.
Heat 2 or 3 inches Crisco to 365oF in deep fryer or deep saucepan!. Heat oven to 200oF!.
Place 1/ 2 cup flour in paper or plastic bag!. Add vegetables a few at a time!. Shake to coat!. Shake off excess flour!.
Dip vegetables, a few at a time, in batter!. Let excess drip off!. Fry in shortening heated to 365oF!. Fry 3 or 4 minutes or until golden brown!. Turn as needed for even browning!. Drain on paper towels!.
Place fried vegetables on heatproof plate, or pan in 200oF oven to keep warm until all vegetables are fried!. Sprinkle lightly with salt!. Serve immediately!.Www@FoodAQ@Com

* cheddar cheese (or any)

Preparation:
* blanch the zucchini in boiling salty water for about 1 - 2 minutes, rinse well and keep in cold water!.
* in a frying pan, add little cooking oil + chopped bacon + minced onion until soft and fragrant!.
* cut the zucchini length wise, use a teaspoon to scoop out the middle, mince it and add to the frying pan!.
* season with ground black pepper
** fill the zucchini with the above
** preheat the oven to 350F
** add one layer of shredded cheese on top, on a baking tray, into the oven for 5 - 10 minutes

My mom always slices it up and lays it in a glass dish!. She then drizzles olive oil over top and sprinkles a little parmesan cheese on top!. She bakes it til the cheese gets good and dark!. Simple but delicious!

We like it breaded and fried in some olive oil or I see someone said to bake!. That would be healthier!.

1/3 C Bisquick or Jiffy
salt and pepper
1/2 C shredded cheddar
2 eggs
2 C shredded zucchini

I often grill zucchini!. Just cut into long slices and place on the grill for a few minutes!. When they are done put a dab of butter and a little salt on the slices!.!.!. deliciousWww@FoodAQ@Com
