Sandy --- You will need a small but powerful
mixer like a 20 qt!. Hobart to mix that much dough at a time!. And a 1 qt!. dough will strain it some but it's a tough little mixer and can take the strain!. A 1 qt!. dough would be 1qt!. liquid = 2 lb!. + 6 lb!.flour + 12oz of other ingredients total of 8 3/4 lb!.[ 140 oz!.]
you will need to use 18oz!. of dough to make a 1 lb!. loaf of bread after baking so

The reason I recommend a 20 qt!. Hobart I used one every day for 20 years I gave it to my son when I retired and he is stil using it!. They are tough!. Pricey but very good!.

I make my own dough , flour ,water, yeast , and salt , if you have a big oven you could make six loafs at the time ,but I would do his in 2 steps in mine!.

When I make my dough I make a well on my table and work on the table surface, especially for a large amount of flour !.If I was to make 1 loaf I also use my bread machine,but for a large batch you need a professional mixer , therefore for 12 cups of flour it would be best if you did this by kneading the dough yourself , let it rise twice and shape the loafs for the second rising, cover them with a tablecloth!. The reason why I bake them in batch is to obtain even colour and equal baking, by baking too many things in the oven the air will not circulate properly and the humidity will prevent the dough to rise equally!. May I ask you why are you making all these break all at once!?Www@FoodAQ@Com

how big of loaves!?
why not save some money and do it in three or four batches in the kitchen aid you have!. it may work better that way because by the time you have finished mixing the last batch of bread, the first may be finished proofing and you may be able to either form the loaves or those loaves will be ready to go into the oven!.Www@FoodAQ@Com
