6 to 7 cups all-purpose flour
3 tablespoons sugar
1 tablespoon salt
2 tablespoons shortening
2 packages quick acting or active dry yeast
2 1/4 cups scalded milk cooled to about 120°
Preparation:
Mix 3 1/2 cups of flour with sugar, salt, shortening and yeast in a large mixing bowl!. Add very warm milk; beat for about 1 minute!. Stir in enough of the remaining flour, a cup or so at a time, until dough is easy to handle!.
Turn dough onto a lightly floured surface!. Knead, adding more flour as necessary to keep it from sticking, until smooth and elastic, about 8 to 10 minutes!. Place dough in a large buttered mixing bowl!. Turn dough over so greased side is up!. Cover with a clean dish towel and let rise in a warm place, out of drafts, for about 1 hour, or until doubled!. When dough is touched, an indentation will remain!.

Punch dough down and divide into two equal portions!. Flatten each half with hands or rolling pins into a rectangle about 18x10 inches!. Starting at 10-inch edge, roll dough tightly; pinch long seam together!. With sides of hands, press each end of loaf; fold ends under loaf!. Place loaves, seam side down, in loaf pans (approximately 9 x 5 x 3-inch)!. Brush each loaf lightly with butter!. Cover loosely with clean dish towels and let rise until double, about 35 to 50 minutes!. Preheat oven to 425°!. Bake loaves on a low rack, so tops of pans are at the center of the oven!. Bake for 25 to 30 minutes!. Bread will sound hollow when lightly tapped!.

Cinnamon Bread

INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup vegetable oil
1 1/4 cups sugar, divided
1 cup buttermilk
1 egg
1 1/2 teaspoons ground cinnamon

DIRECTIONS:
In a large mixing bowl, combine flour, baking soda and salt!. In a small bowl, combine oil and 1-1/2 cups sugar!. Add buttermilk and eggs; mix well!. Stir into dry ingredients just until moistened!. Fill a greased 8-in!. x 4-in!. x 2-in!. loaf pans about one-third full!.

Combine cinnamon and remaining sugar; sprinkle half over the batter!. Top with remaining batter and cinnamon-sugar!. Swirl batter with a knife!. Bake at 350 degrees for 45-55 minutes or until a toothpick inserted in the center comes out clean!. Cool in pans for 10 minutes before removing to a wire rack!.






Basil Tomato Bread
Preparation time: 20 min Baking time: 30 min
Yield: 16 servings, 1/2 cup butter

Butter Ingredients:
1/2 cup Butter, softened
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning (see below)

Bread Ingredients:
2 1/2 cups all-purpose flour
1/3 cup grated Parmesan cheese
1 tablespoon sugar
2 teaspoons dried onions
1 teaspoon baking soda
1 teaspoon dried basil leaves
1/2 teaspoon salt
1 cup Sour Cream
1/3 cup milk
1/3 cup chopped sun-dried tomatoes in oil
1/4 cup Butter, melted

Topping Ingredients:
1 egg white, slightly beaten
2 tablespoons grated Parmesan cheese

Heat oven to 350°F!. Combine all butter ingredients in small bowl!. Beat at low speed, scraping bowl often, until creamy!. Set aside!.

Combine flour, 1/3 cup Parmesan cheese, sugar, onion, baking soda, basil and salt in large bowl!. Stir in sour cream, milk, tomatoes and 1/4 cup melted butter just until moistened!. Turn dough onto lightly floured surface; knead about 10 times or until smooth!. Divide dough in half!. Pat each half into 4 1/2-inch round loaf!.

Place loaves 3 inches apart onto greased baking sheet!. Brush tops with egg white!. Sprinkle with 2 tablespoons Parmesan cheese!. Cut an X about 1/2-inch deep in top of each loaf!. Bake for 30 to 35 minutes or until golden brown!. Remove from baking sheet; cool completely!. Serve with prepared butter!.

*Substitute 1/4 teaspoon dried basil leaves, 1/4 teaspoon dried marjoram leaves, 1/4 teaspoon dried oregano leaves and 1/8 teaspoon dried sage!.Www@FoodAQ@Com

Milk N' Honey

Bread 1 cup milk
2/3 cup honey
1/4 cup butter or margarine
1 1/2 cup all-purpose flour
1 cup whole wheat flour
1/2 cup wheat germ
1/2 cup chopped walnuts, toasted (optional)
1 Tbsp!. baking powder
1/2 tsp!. salt

Preheat oven to 325oF
!. In a saucepan or microwave-safe bowl, combine milk, honey and butter!.
Heat just until the butter is melted!.
Cool for 10 minutes!.
In a bowl, combine the remaining ingredients; stir in milk mixture just until combined!. Pour into a greased 9x5-in!. loaf pan!.
Bake for 1 hour or until a wooden pick inserted near the center comes out clean!. Cool for 10 minutes before removing from the pan to a wire rack!.
Serve warm!.




IRON RICH QUICK BREAD
Yield: 1 Loaf

1 c All purpose flour
1 c Whole wheat flour
2 tb Wheatgerm
2 ts Baking powder
1 ts Baking soda
1 ts Salt
1 c Oats
1/2 c Brown sugar
1/4 c Oil
1/2 c Blackstrap molasses
1 1/4 c Water
1 c Raisins

Combine flours, wheatgerm, baking powder & soda & salt!. Stir in oats &
sugar!. Mix thoroughly!. Add raisins!. Combine oil, molasses & water!.
Add to dry ingredients!. Stir until thoroughly blended!. Turn into
greased 23 X 13 X 7 cm loaf pan!. Bake at 350F for 50 minutes!.






PERFECT WHITE BREAD

1 pkg!. yeast
5 3/4 to 6 1/4 c!. sifted flour, plain
2 1/4 c!. milk
2 tbsp!. sugar
2 tsp!. salt
1 tbsp!. shortening
1 lg!. mixing bowl

In large mixing bowl: Combine yeast and 2 1/2 cups flour!. Heat milk, sugar, salt and shortening until melted!. Add to dry mixture!. Beat low 1/2 minute, scraping sides!. Beat 3 minutes on high!. Stir in enough flour to make moderately stiff dough!.
Turn on lightly floured surface!. Knead until smooth (8 to 10 minutes)!. Shape in ball; place in lightly greased bowl, turn once to greased side!. Cover, let rise in warm place about 1 1/4 hours!. Punch down!.

Cut in 2 portions!. Shape each in smooth ball; Cover, let rise 10 minutes!. Shape in loaves; place in 2 greased loaf pans!. Cover, let rise until double (45 to 60 minutes)!. Bake at 400 degrees for 35 minutes or until done!. Butter tops if desired!.Www@FoodAQ@Com

It is so easy to make bread!. The important thing is how careful you are with the yeast!. Make sure you have dried/fresh yeast, add dissolved sugar (using water), and make sure that the water is tepid!. Then put it into any kind of flour with a pinch of salt!. You can rub in butter first if you want it to be a very moist bread!. You can add nuts or dried fruit to make different kinds of bread!. Kneading is getting air into the bread, so you fold over the mixture again and again, trapping air into the dough!. Leave to rise for at least 2 hours, then cut into loaves, knead again and leave it again for 1/2 hour!. Cook in oven for 45 mins on 180C!. It is cooked when you tap the bottom and it sounds hollow!.
