I am a KCBS Certified BBQ Judge and despite what everyone thinks, "falling off the bone ribs" are over cooked!.
There should be very little resistance when bitten and the bone start to dry out and turn white while you are still chewing!.
Wrapping in aluminum foil is a good way to finish them, but water will not burn like Apple Juice can!. 1 hour at 250 degrees will be plenty!.

Barbecued Beef Ribs
INGREDIENTS:
2 pounds beef back ribs
1/2 cup ketchup
2 tablespoons finely chopped
onion
2 garlic cloves, minced
2 tablespoons vinegar 1 tablespoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon Worcestershire
sauce
1/8 teaspoon garlic powder
1 dash hot pepper sauce
DIRECTIONS:
1!. Cut ribs into serving-size pieces; place in a large kettle and cover with water!. Simmer, uncovered, for 50-60 minutes or until tender!. Meanwhile, combine remaining ingredients in a small saucepan!. Simmer, uncovered, for 10 minutes!. Drain ribs; place in a greased shallow 2-qt!. baking dish!. Cover with sauce!. Bake, uncovered, at 350 degrees F for 50-60 minutes!.
Thick 'n' Zesty Ribs
INGREDIENTS:
4 pounds pork baby back ribs,
cut into serving size pieces
1 teaspoon garlic salt
1 cup ketchup
1/2 cup vinegar
1/4 cup sugar 1 1/2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon ground mustard
1 teaspoon celery seed
1/2 teaspoon pepper
DIRECTIONS:
1!. Place ribs in a greased 13-in!. x 9-in!. x 2-in!. baking dish!. Rub with garlic salt!. Bake, uncovered, at 350 degrees F for 45 minutes; drain!. Combine the remaining ingredients; mix well!. Pour over ribs!. Bake, uncovered, for 40-50 minutes or until ribs are tender, basting several times!.
Baby Back Ribs
INGREDIENTS:
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon paprika salt and pepper to taste
3 pounds baby back pork ribs
1 cup barbeque sauce
DIRECTIONS:
1!. Preheat grill for high heat!.
2!. In a small jar, combine cumin, chili powder, paprika, salt, and pepper!. Close the lid, and shake to mix!.
3!. Trim the membrane sheath from the back of each rack!. Run a small, sharp knife between the membrane and each rib, and snip off the membrane as much as possible!. Sprinkle as much of the rub onto both sides of the ribs as desired!. To prevent the ribs from becoming too dark and spicy, do not thoroughly rub the spices into the ribs!. Store the unused portion of the spice mix for future use!.
4!. Place aluminum foil on lower rack to capture drippings and prevent flare-ups!. Lightly oil grate, and lay ribs on top rack of grill!. Reduce heat to low, close lid, and leave undisturbed for 1 hour!. Do not lift lid at all!.
5!. Brush ribs with barbecue sauce, and grill an additional 5 minutes!. Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter!.Www@FoodAQ@Com

doesnt matter what ribs you get!. grill or smoke or oven bake, the trick is finishing them!. Let me enlighten you!.!. I have spent all day next to he smoker just to have decent ribs, but I knew I could do better!.

Wrap the ribs inside the foil with the seasonings sauce and enough juice to cover them, closing tightly and place them into the baking dish!. 250-300 degrees for no less than 1 1/2 hours (the longer the better)!. I promise, you will not be able to hold the rib by the bone, the meat will as they say "fall right off"!. it will be soo tender and juicy that you can mash it with a fork!. Who ever eats these will never eat anywhere again!. The'll be kicking you door in for you ribs!.
