Can you use....??!
i am trying to make pudding, and my recipe calls for butter or margarine!. I am out of regular butter, and all I have is the "Brummel and Brown" butter!. It's like made from yogurt or whatever!. Do you think it would be okay to use it in the pudding!?!? Thanks a lot!

Vanilla Pudding from Scratch
45 min | 25 min prep | SERVES 3 1 egg yolk
2 1/2-3 tablespoons cornstarch
2 tablespoons sugar (or to taste)
1 cup milk
1 teaspoon vanilla extract (seeds from 1 vanilla bean)
1/2 cup whipping cream, well chilled
Note: I measure the cornstarch out of its box without sifting, leveling the spoons on the side of the box!. Lower amount of starch will make a creamy soft pudding, larger amount a firmer pudding!.
In a small pot whisk together egg yolk, 3 tbs of the milk, sugar and cornstarch (and vanilla seeds if using) until smooth!. Best use a wire whisk to do so!. Add rest of the milk, stir until smooth!.
Put egg milk over medium heat and, stirring constantly, bring to a boil once, remove from heat and let cool!. Stir frequently while the pudding is cooling to avoid a skin forming!.
Whip cream until stiff!.
When the pudding is cold fold the whipped cream in with a rubber spatula!. Fill in individual serving bowls, layer with fruit salad if you like or serve with a sauce!. Will keep in the fridge for 12 hours or more!.
Note: Cooking time is cooling time!.
Vanilla Pudding Mix
3 cups instant nonfat dry milk
4 cups granulated sugar
1 teaspoon salt
3 cups cornstarch
1 vanilla bean
Mix the milk, sugar, salt and cornstarch until the ingredients are well blended!. Cut the vanilla bean into several large pieces and stir them into the mix, seeds and all!. Store mix in an airtight container!.
To use, stir the mix in the canister before measuring out 1/2 cup mix into a saucepan!. Add 2 cups milk and cook over low heat, stirring, until mixture thickens and comes to a boil!. Continue stirring for 1 minute, remove from heat, and pour into individual serving dishes!. Pudding will thicken further as it cools!.
For a richer pudding, cook as directed and, after taking pudding off heat, stir in 1 egg lightly beaten with 1/2 teaspoon nutmeg, 1/2 teaspoon vanilla extract and 1 tablespoon sweet butter!. Cover and let sit for a minute or two, uncover and stir, and then pour into the individual serving dishes!.Www@FoodAQ@Com
