Sweet and Spicy London Broil

1 flank steak (about 1 3/4 pound)
6 tablespoons extra-virgin olive oil
2 tablespoons sweet paprika
2 tablespoon light brown sugar
1 tablespoons kosher salt
2 teaspoons chili powder
1 lime, zested

Preheat a broiler to high!. Bring the steaks to room temperature about 20 minutes before cooking!.
Mix the olive oil, paprika, sugar, chili powder, salt, chili powder, and zest in a bowl to make a paste!. Rub the spice mixture all over the steak!. Broil until just charred and crispy on top, about 6 minutes on 1 side!. Flip the steak and cook until beginning to char, about 6 minutes more or until rare and temperature registers 115 degrees F on an instant-read thermometer!. Place the steak on a cutting board and let rest, tented with foil for about 10 minutes!. Slice across the grain and serve!.

1 teaspoon salt
3 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon vegetable oil
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano

In a small bowl, mix together garlic, salt, soy sauce, ketchup, vegetable oil, black pepper and oregano!.
Score both sides of the meat, diamond cut, about 1/8 inch deep!. Rub garlic mixture into both sides of the meat!. Wrap tightly in aluminum foil, and refrigerate for 5 to 6 hours, or overnight!. Flip meat every few hours!.
Preheat an outdoor grill for high heat, and lightly oil grate!.

1 lb beef flank steak, get the best you can find
2 medium onions, thinly sliced
1/4 teaspoon salt
3 tablespoon butter
6 tablespoons oil
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, crushed

Cut both sides of steak in a diamond pattern, 1/8 inch deep!.

Cook and stir onions and 1/4 salt in butter until onions are tender!.

Keep this mixture warm!.

Mix remaining ingredients; brush half on one side of the beef!.

Broil 3 inches from heat for 5 minutes!.

Turn and brush with remaining oil mixture!.

Broil 5 more minutes!.

Cut across grain in thin slices!.

Serve with onions!.

1!. In a small bowl, mix together garlic, soy sauce, oil, ketchup, oregano, and black pepper!. Pierce meat with a fork on both sides!. Place meat and marinade in a large resealable plastic bag!. Refrigerate 8 hours, or overnight!.
2!. Preheat grill for medium-high heat!.
3!. Lightly oil the grill grate!. Place steak on the grill, and discard marinade!. Cook for 5 to 8 minutes per side, depending on thickness!. Do not overcook, as it is better on the rare side!.

1/4 cup red wine vinegar

1 (1 1/2-pound) beef flank

DIRECTIONS:
1!. In a small bowl, whisk the water, vinegar, oil, tomato paste, 1 teaspoon garlic salt, 1/2 teaspoon thyme and 1/4 teaspoon pepper; add bay leaf!. Pour into a large resealable plastic bag!.
2!. Score the surface of the steak, making diamond shapes 1/4 in!. deep; add to marinade!. Seal bag and turn to coat; refrigerate for 3 hours or overnight, turning occasionally!.
3!. Coat grill rack with nonstick cooking spray before starting the grill!. Drain and discard marinade!. Pat steak dry with paper towels!. Combine the remaining garlic salt, thyme and pepper; rub over both sides of steak!.
4!. Grill steak, covered, over medium-hot heat for 6-8 minutes on each side or until a meat thermometer reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F)!. Thinly slice across the grain!.

INGREDIENTS:
3 tablespoons crumbled blue
cheese
2 tablespoons butter, softened
1 teaspoon fresh chives
(optional)

1 teaspoon onion powder
1/4 teaspoon ground cayenne
pepper
1 (2 pound) beef flank steak
2 tablespoons olive oil, divided

DIRECTIONS:

2!. In a bowl, mix the blue cheese, butter, and chives!. Set aside!. In a separate bowl, mix the black pepper, garlic salt, onion powder, and cayenne pepper!.
3!. Rub the steak with olive oil!. Coat both sides of the meat with the spice mixture, and rub in by hand or press with a spatula!.

If you have a favorite marinade get it in there!. If not worstershire sauce and red wine a little olive oil and a few cloves of garlic just bashed with something like a mallot!. Grill or broil no more than ten minutes on either side!.
