How do you make liver and onions?!
i tried it tonight and it didnt turn out that bad (aka i'm not sick right now!. !. !. lol) anyway, i wanted any tips or suggestions on how to make liver!. !. !. i like it, but what spices work better then others for you!?

liver is an organ meat there for if you cook it for 40 minutes it will be tough and dry liver is a quick cook item
yes the bacon fat or renderings are a superb idea but liver should be cooked about 6-8 minutes perside and removed from the pan!. I happen to like calfs liver it is not nearly as old!.

fry a pound of bacon , CRISP saving all of the fat
but pour it into a glass or metal conatiner as you go!.
Slice onions however you like them
put back about 1 tbsp of grease per large onion or more to taste!. fry until golden or how ever you like
remove from the pan
add the liver but dont crowd the pan!.
you can also dredge your liver in flour if you like ( put a plate of flour out and pat it on both sides of the meat shaking off the excess before it hits the pan) fry it up then turn over
same on that side fry all meat removing as you go
set on another plate
at the end put all meat back into the pan and the onions crumble the bacon on the top allow to simmer about 5 min to reheat the meat and serve you could also make a pan sauce or gravy before you add back the onions or the bacon by adding a can of evaporated milk 12 oz some salt and pepper rasing it to the boil adding a slurry ( 1 tbsp water and 1 tbsp cornstarch and mixing in a cup and pouring intot the pan ) boiling and stirring for 1 minute then serving this all together!.

I add onions sometimes as does the first one and sometimes bacon as does the second one!. The only changes that I do is that I soak the liver in milk then dredge in flour with salt and pepper mixed in and then fry until done and add the fix'n on top and serve!.
Salt and pepper are the only seasonings that I use!.!.!.!.!.onions and bacon can compliment the flavor but liver has a distinct flavor that would be hard to overcome!. I'd add a seasoned side dish rather than add to the liver instead!. Stick to the seasonings that YOU like!.Www@FoodAQ@Com

Skillet with hot oil
Cut liver in thin strips
Wash
Mix about a cup of flour, salt, and pepper in a zip lock bag
Mix well
Salt your liver
cut 1 large onion in circle strips
Shake the liver until it is coated in the bag
Drop peices in the hot grease!.!.!.it will spit and pop so be careful
as they get smaller add more!.!.!.!.cover and simmer on low
Add the onions
Turn each when they are brown on the other side!.!.!.cover and simmer with onions this time
When brown add the left over flour over the liver and onions in the pan!.!.!.you may want to add some pepper or salt!.!.!.if you didn't add much to the flour
Add a small amount of water and stir the mixture!.!.!.simmer
MAKE a pan of home made biscuits!.!.!.!.sweet tea and mashed potatoes!.!.!.green beans and your good to go!!!Www@FoodAQ@Com

Funny how you bring this up!. Haven't had liver in ages but bought some calves liver this week and intend to have it this weekend (it's been in the freezer)!. What we do is cut the bacon into squares and fry them up!. While the bacon is cooking, rinse, pat dry, and slice the liver into strips (bite size so I won't have to cut anything after cooking) and toss those in with the bacon (bacon should be about half cooked)!. Cook until liver has almost no pink inside!. Meanwhile, slice the onions (slices cut into quarters) and toss those in!. Stir fry it all around, salt, pepper to taste!. I like my onions only bearly cooked so once they go in I almost constantly stir the whole thing for a few minutes!. Sometimes we'll add some sherry (remove all the stuff and stir sherry into the liquid left in the pan to use as a gravy)!. Sometimes we'll add some ketsup!. Mom used to chop up boiled potatoes and add to the mix but we never have cooked potatoes lying around so we just skip that!. I like the liver mix over rice!. We do something similar with chicken livers too--they taste different from calves liver!.Www@FoodAQ@Com
My family loves it!.!. rinse the liver off and salt and pepper it and add a little garlic powder !. Slice your onions cook them in a skillet with a couple tablespoons of oil till they are tender 5 minutes or so on med!. take them out and set them aside for later!. Brown the liver in the same skillet and 2 teaspoons of Worcestershire sauce then coat the liver with flour and cover it with water let it simmer on low for about 40 minutes add your saved onions and your ready to eatWww@FoodAQ@Com
