Baked bread in 9x5 loaf pan, edges & top overly brown but center is gooey. Help!?!
I followed the directions for strawberry bread!. Toothpick didn't come out clean, but the edges were getting VERY done!. I took it out to cool, thinking it might set up, but it didn't!.
Try number two did the same thing!. I've heard using foil tents might help, but didn't have much luck with that!. Is my oven just too hot!? I'm new to this bread thing!. Should I try lower temp for longer!? Any ideas!?Www@FoodAQ@Com

Are you using the correct rack placement in the oven!?
If you are using a glass pan I think you have to lower the oven temp by 25 degrees!.

A strawberry bread has quite a bit of sugar in it so it has a tendency to brown a bit more than some other breads!. Bake the next one a bit longer and place a rim of foil around the edge of your pan!.
For this bread, since it is to late to put it back in the oven when you slice it put your slices in the toaster!. I love toasted pound cake and banana bread!.
For a treat tomorrow morning try strawberry french toast!. Doesn't that sound like a good breakfast!? A little butter and jam on it!.!.!.!.!.!.!.!.Www@FoodAQ@Com

besides keeping a cheap $2 oven thermometer in there, to make sure the oven is the right temp!.!.!.!.!.if you used salted butter in the recipe, or to grease the pan, the salt can burn !.!.!.!. Dark, non-stick pans cook faster than lighter metal; and glass pans should bake about 25 degrees lower!.!.!.!.!.!.!.Www@FoodAQ@Com
Get an oven thermometer and check the temp!. It is probably too hot!. Many ovens are as much as 25 degrees off!.
If the temp checks ok, you may be baking it to near the top of the oven!. Lowering your rack a notch or two may help!.

If the middle puffs up then you generally have too much batter in the pan!. The edges are next to the pan so it is exposed to much more heat!. It needs evening out!. Check out the link below for cooking strips!.Www@FoodAQ@Com
Make sure your oven is heated to the correct temp!. with a thermometer!. Not just the temp setting on the oven itself!.

Invest in an oven thermometer to check your oven's temperature!. Meanwhile, I'd lower the temp and cover the pan completely with foil and check every 15 minutes until the toothpick comes out clean!.Www@FoodAQ@Com
your oven is Way to hot go out and buy a oven thermometer for $6!.00 and find out what your temperature of the oven actually is!.Www@FoodAQ@Com
It is the temp of your oven!. Try lowering it by 25 degrees and maybe turning it halfway during the cooking process!.Www@FoodAQ@Com

If the toothpick doesn't come out clean and the edges are brown, use foil around the edges!.
If you have an oven temperature gauge, you might be able to tell what the oven truely registers at!. If you didn't have that problem with other items cooked in the oven, it probably isn't a temperature inaccuracy problem!.
Previous oven I had, even though the recipe says 350 degrees, had to turn it up cause the true temperature on the oven was 20 degrees cooler!.

2 cups white sugar
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda

1 1/4 cups chopped pecans (I leave them out)
Preheat oven to 350 degrees F (175 degrees C)!.
Butter and flour two 9 x 5 inch loaf pans!.
Slice strawberries, and place in medium-sized bowl!. Sprinkle lightly with sugar, and set aside while preparing bread mixture!.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well!. Blend oil and eggs into strawberries!. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened!. Stir in pecans!.
Divide batter into pans!.
Bake for 45 to 50 minutes, or until tester inserted comes out clean!.
Let cool in pans on wire rack for 10 minutes!.
